blueberry sour cream pie
C.W. Newell

Blueberry sour cream pie is one of those old-fashioned grandma recipes that deserves a comeback. Sweet blueberries bake in a lightly tangy sour cream filling for a dessert that falls somewhere between a fruit pie and a cheesecake. Then it’s topped with a buttery pecan streusel, making every bite creamy, fruity, and perfectly crisp. Bake it for Sunday suppers, summer cookouts, or even holiday gatherings. Pie recipes this good are welcome at any occasion!

Can you make blueberry sour cream pie with frozen blueberries?

Yes! Frozen blueberries work well in this pie, which means you can make it year-round. First, thaw the berries completely, then pat them very dry with paper towels to remove as much excess moisture as possible before folding them into the filling. This helps the sour cream filling bake up creamy and prevents the pie from becoming watery. Here are more desserts you can make with frozen fruit!

Can you make sour cream pie with other fruits?

Yes. Blackberries, raspberries, pitted cherries, diced peaches, and strawberries all work well in the creamy sour cream filling. Use 2 1/2 cups of your chosen fruit, keeping in mind that juicier varieties may need a little extra baking time.

Can you make blueberry sour cream pie ahead?

Yup! Because the pie needs to chill after baking, blueberry sour cream pie is an ideal make-ahead dessert. Keep it covered in the refrigerator for up to 1 day for the crispiest crust and the best filling texture. Leftovers will keep in the refrigerator for up to 4 days.

Ingredients

For the Pie:

  • 3 Tbsp. all-purpose flour, plus more for dusting
  • 1 homemade or store-bought pie crust
  • 1 large egg, beaten
  • 1 1/4 cups sour cream
  • 1 cup granulated sugar
  • 1 Tbsp. fresh lemon juice
  • 1 1/2 tsp. vanilla extract
  • 1/4 tsp. kosher salt
  • 2 1/2 cups fresh blueberries (about 10 oz.)

For the Topping:

  • 1/3 cup all-purpose flour
  • 2 Tbsp. packed light brown sugar
  • 2 Tbsp. chopped pecans
  • 1 tsp. lemon zest
  • 1/4 tsp. ground cinnamon
  • 2 Tbsp. salted butter, melted

Directions

    1. Step 1For the pie: Preheat the oven to 400˚F. Place a baking sheet on the lower third oven rack.
    2. Step 2On a lightly floured surface, roll the pie crust into a 12-inch circle. Transfer the crust to a 9-inch pie plate (not deep-dish). Tuck the edges of the crust under and crimp as desired. Refrigerate for 30 minutes (or freeze for 15 minutes).
    3. Step 3In a large bowl, whisk together the egg, sour cream, granulated sugar, lemon juice, vanilla, salt, and flour. Fold in the blueberries. Pour the mixture into the prepared pie crust, spreading evenly.
    4. Step 4Bake on the preheated baking sheet until the crust is just lightly golden and the filling edges are puffed and set but the center is still slightly loose, about 30 minutes.
    5. Step 5For the topping: Meanwhile, combine the flour, brown sugar, pecans, lemon zest, and cinnamon in a medium bowl. Stir in the melted butter until clumps form. Refrigerate until ready to use.
    6. Step 6Scatter the topping all over the pie filling, letting it clump. Bake until the topping is golden, the filling is set around the edges, and the crust is deeply golden brown, 10 to 15 minutes more.
    7. Step 7Allow the pie to cool completely, about 2 hours, then refrigerate for at least 1 hour and up to 1 day before serving.
