There’s just something about a cozy baked pasta that feels like a big ol’ hug from the oven—and this cheesy vegetable spaghetti casserole delivers exactly that. It’s inspired by the classic chicken spaghetti everyone knows and loves, but this version leans into hearty, flavorful veggies instead. And let me tell you, not a single bite feels like it’s missing a thing!

The magic starts with a mix of sautéed vegetables—mushrooms, zucchini, bell peppers, and onions—all cooked down until they’re tender and just a little caramelized. Then come some juicy burst cherry tomatoes and a handful of spinach for a pop of freshness. Everything gets tossed with spaghetti in a creamy, savory sauce (with a little sherry for depth—don’t skip it if you can help it!) and plenty of melty cheese.

Once it’s baked until bubbly and golden on top, you’ve got a dish that’s rich, comforting, and perfect for feeding a crowd. It’s the kind of meal that works just as well for a weeknight dinner as it does for sharing with friends. Serve it up with a simple salad, and dinner is done, friends!

What vegetables work best in cheesy vegetable spaghetti casserole?

Mushrooms, zucchini, bell peppers, onions, spinach, and tomatoes all work well. They add texture, flavor, and make the dish hearty and satisfying.

Can you make this cheesy vegetable spaghetti casserole ahead of time?

Yes! You can assemble the casserole up to 2 days in advance, cover, and refrigerate it. Remove it from the fridge and let it sit at room temperature for 30 minutes when ready to serve, then bake as directed.

Can you freeze cheesy vegetable spaghetti casserole?

You sure can! To freeze, wrap it tightly and store it for up to 3 months. When ready to serve, thaw overnight in the refrigerator before baking.

Ingredients

  • 3 Tbsp. salted butter, plus more for the baking dish
  • Kosher salt, for the pasta water
  • 1 lb. spaghetti, broken into 2-inch pieces
  • 1 green bell pepper, diced
  • 1/2 yellow onion, diced
  • 8 oz. cremini mushrooms, trimmed and quartered
  • 1 medium zucchini, cut into 1/2-inch pieces
  • 1 1/2 tsp. fresh thyme
  • 3 garlic cloves, minced
  • 1 pint cherry tomatoes
  • 3 cups loosely packed baby spinach
  • 1/2 cup dry sherry
  • 1/2 cup heavy cream
  • 2 10.5-ounce cans cream of mushroom soup
  • 1 (4-ounce) jar diced pimentos, drained
  • 1 1/2 cups grated sharp cheddar cheese (about 6 ounces)
  • 1 1/2 cups grated fontina cheese (about 6 ounces)
  • 1 tsp. seasoned salt (such as Lawry’s)
  • 1/4 tsp. cayenne pepper
  • 2 cups vegetable broth

Directions

    1. Step 1Preheat the oven to 350˚F. Butter a 9-by-13-inch baking dish.
    2. Step 2Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package directions for al dente. Drain and set aside in a large bowl.
    3. Step 3Melt the butter in a large skillet over medium-high heat. Add the bell pepper and onion and cook, stirring, until beginning to soften, 2 to 3 minutes. Add the mushrooms, zucchini and thyme and continue to cook until the vegetables are tender and just beginning to brown, about 5 minutes. Reduce the heat to medium-low and add the garlic and cherry tomatoes. Cook, stirring occasionally, until the tomatoes burst and turn jammy, 5 to 6 minutes. Add the spinach and stir just until wilted. Transfer the vegetables to the bowl of spaghetti.
    4. Step 4Add the sherry to the drippings in the skillet. Bring to a simmer over medium heat and cook, scraping up any browned bits, about 30 seconds. Add the heavy cream and simmer for another 30 seconds. Pour into the bowl with the spaghetti and vegetables. Add the cream of mushroom soup, pimentos, 1 cup each cheddar and fontina, the seasoned salt, cayenne pepper and vegetable broth. Stir until well combined.
    5. Step 5Transfer the spaghetti mixture to the prepared baking dish and top with the remaining ½ cup each cheddar and fontina. Bake until golden brown and bubbly, 40 to 45 minutes. Let sit 10 to 15 minutes before serving.
