This 7-layer casserole is one of those dependable dinners I keep coming back to. It’s filling, easy, and built from ingredients that I usually have on hand. Everything layers together in one dish—rice, beans, seasoned beef, and plenty of cheese—then bakes until hot and cohesive, making it a practical choice when you want something satisfying without overthinking it. It's like my favorite 7-layer dip, but this version actually counts as dinner!
It’s also the kind of casserole that travels well, so it’s right at home at potlucks or parked on a table at a tailgate party. You can assemble it ahead of time, pop it in the oven when you’re ready, and serve it straight from the dish. The combination of warm, savory layers with fresh toppings keeps it balanced, so it doesn’t feel too heavy. It’s casual, adaptable, and great for a hungry group, whether you’re feeding your family or a crowd gathered around the game on TV.
What is a 7-layer casserole?
This 7-layer casserole is a cozy, baked Tex-Mex dish made by layering rice, beans, corn, tomatoes with green chiles, seasoned ground beef, and cheese. It’s finished with fresh toppings like tomato, avocado, Cotija cheese, and cilantro for added flavor and texture.
Can you use turkey instead of ground beef in 7-layer casserole?
Absolutely. Ground turkey, ground chicken, or even plant-based meat alternatives work well in this recipe. You can also skip the meat entirely for a vegetarian version.
Can you make 7-layer casserole ahead of time?
Yes, this is a great make-ahead recipe. You can assemble the casserole up to one day in advance, cover it tightly, and refrigerate. Let it sit at room temperature for 20 to 30 minutes before baking. You can also freeze it before or after baking; just wrap tightly and freeze for up to two months. Thaw overnight in the refrigerator before reheating.

Ingredients
- 2 Tbsp. olive oil
- 1 lb. ground beef
- 2 heaping tablespoons taco seasoning
- Kosher salt, to taste
- Black pepper, to taste
- 2 (8.5-ounce) bags microwave white rice or 4 cups cooked rice
- 1 (15-ounce) can ranch-style beans or chili beans
- 1 cup frozen fire-roasted corn
- 1 (14.5-ounce) can diced tomatoes with green chiles
- 1 1/2 cups grated monterey jack (about 6 ounces)
- 1 small Roma tomato, diced (about 1/2 cup)
- 1 small avocado, diced
- 1/2 cup crumbled Cotija (about 2 ounces)
- 1/4 cup fresh cilantro leaves
Directions
- Step 1Preheat the oven to 375°F.
- Step 2In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon. Sprinkle with the taco seasoning and a pinch each of salt and pepper. Cook until the beef is cooked through and browned, 5 to 6 minutes. Remove the beef from the heat and set aside.
- Step 3Spread the rice in an even layer on the bottom of a 2 1/2- to 3-quart baking dish. Top the rice with the following ingredients in this order, spreading each in an even layer: the beans, then the corn, then the tomatoes and green chiles, and then the cooked beef. Sprinkle the dish with the monterey jack cheese. Bake until the cheese has melted and the casserole is hot throughout, 18 to 20 minutes.
- Step 4Sprinkle the top of the casserole with the Roma tomato, avocado, Cotija, and cilantro before serving.
