Ingredients
- 3/4 cup plus 2 Tbsp. plain Greek yogurt
- 3 Tbsp. olive oil, plus more for the grill
- Juice of 2 lemons
- 4 garlic cloves, grated
- 2 3/4 tsp. kosher salt
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1/2 tsp. ground coriander
- 1/2 tsp. black pepper
- 1/4 tsp. allspice
- 2 lb. boneless, skinless chicken thighs
- 1/4 cup tahini
- 10 cups chopped romaine lettuce (from 2 to 3 hearts)
- 1 cup lightly crushed pita chips
- 1 cup cherry tomatoes, quartered
- 1/2 cup fresh parsley, chopped
- 1/3 cup pepperoncini, sliced
- 1/2 English cucumber, diced
- 1/4 red onion, thinly sliced
Directions
- Step 1Make the marinade: Whisk ¾ cup yogurt, 2 tablespoons olive oil, the juice of 1 lemon, 3 garlic cloves, and 1½ teaspoons salt in a large bowl. Stir in the cumin, paprika, coriander, pepper, and allspice.
- Step 2Add the chicken and toss to coat. Cover and let marinate at room temperature for 15 minutes.
- Step 3Meanwhile, make the dressing: Whisk the tahini and 2 to 3 tablespoons warm water in a medium bowl until smooth. Whisk in the remaining 1 tablespoon olive oil, 2 tablespoons yogurt, 1 garlic clove, the juice of 1 lemon, and 1¼ teaspoons salt.
- Step 4Preheat a grill or grill pan to medium and oil the grates. Working in batches if needed, grill the chicken until well marked and cooked through, 5 to 6 minutes per side (an instant-read thermometer should register 165˚F). Remove to a cutting board and let rest 5 minutes before slicing.
- Step 5Combine the lettuce, pita chips, cherry tomatoes, parsley, pepperoncini, cucumber, and red onion in a large bowl. Pour the dressing over the salad and toss to coat. Divide among bowls and top with the sliced chicken.
