I could cook steak seven days a week and Ladd still wouldn’t get tired of it. This ginger-lime flank steak recipe is a great one to add to your rotation for easy dinners! It’s marinated in the most delicious concoction of fresh garlic, lime juice, and ginger and can be cooked on a grill or grill pan—whichever is easiest!
A few things to note about flank steak if you’re not used to cooking it regularly: It has amazing flavor and texture, but you have to be careful not to overcook it (medium-rare is best). You also need to slice it correctly (against the grain, always!), or it can turn out a little tough. Grab a good meat thermometer, follow those simple rules, and you’ll be good to go. Serve it with rice noodles or these sesame noodles, alongside this yummy summer noodle salad, or simply with white rice (here’s a refresher on how to cook white rice if you need it). So yummy!
What does it mean to slice against the grain?
Take a look at your flank steak, and you’ll see long lines of muscle fibers running through it—that’s the grain. Slice across those lines, not alongside them. Cutting against the grain shortens the muscle fibers, giving you tender, easy-to-chew pieces.
How long does leftover ginger-lime flank steak last in the fridge?
Leftover flank steak can be refrigerated in an airtight container for up to 3 days. Reheat it gently in a skillet or in the microwave to keep the steak from drying out.

Ingredients
- 4 garlic cloves, minced
- 1/4 cup lime juice (from about 2 limes), plus lime wedges for serving
- 1/4 cup soy sauce
- 2 Tbsp. grated fresh ginger
- 2 Tbsp. vegetable oil
- 2 Tbsp. honey
- 2 tsp. sesame oil
- 1/2 tsp. crushed red pepper flakes (optional)
- 1 (1 1/2- to 2-pound) piece flank steak
- Chopped fresh cilantro, for serving
- Sliced green onion, for serving
- Rice or rice noodles, for serving
Directions
- Step 1In a large bowl or baking dish, whisk together the garlic, lime juice, soy sauce, ginger, vegetable oil, honey, sesame oil, and red pepper flakes, if using. Add the flank steak to the marinade and turn to coat. Cover and refrigerate for at least 1 hour or up to 4 hours. Let the steak come to room temperature before grilling.
- Step 2Heat a grill or grill pan over medium-high heat (about 400˚F to 450˚F). Remove the steak from the marinade and pat dry. Grill, covered if using a grill or uncovered if using a grill pan, until a thermometer registers 135˚F in the thickest part (for medium-rare), 6 to 8 minutes per side.
- Step 3Transfer the steak to a cutting board and let rest for 5 minutes, then slice against the grain. Garnish with cilantro and green onion, and serve with rice or rice noodles and lime wedges.
