Grilled Steak with Cilantro-Lime Dipping Sauce

When I fire up the grill, I'm usually thinking about a big, juicy steak—and this grilled steak with cilantro-lime dipping sauce recipe has become a favorite around our house! It gets a quick marinade made with soy sauce, oyster sauce, and a touch of brown sugar, giving it an irresistible savory-sweet flavor and a beautifully caramelized crust.
But the real star of this recipe just might be the cilantro-lime dipping sauce. It's bright, tangy, a little salty, a little sweet, and has just enough red pepper flakes to wake everything up. I love serving the sliced steak with the sauce on the side so everyone can dip each bite to their heart's content.
To round out the meal, I like to serve the steak with green beans, which can go right on the grill, too, picking up those smoky, charred edges that make summer vegetables so delicious. Add a scoop of fluffy white rice, and you've got a complete dinner that's ready in under an hour. It's fresh, flavorful, and exactly the kind of easy grilling recipe I find myself coming back to all summer long.
Can you make the dipping sauce ahead of time?
Yes! The cilantro-lime dipping sauce can be made up to 1 day in advance and stored in the refrigerator. Making it ahead gives the flavors time to meld, making it even more delicious!

Ingredients
- 3 Tbsp. low-sodium soy sauce
- 2 Tbsp. oyster sauce
- 3 Tbsp. packed light brown sugar
- 2 Tbsp. vegetable oil, plus more for the grill
- 1 1/2 to 2 lb. strip steak
- 1/3 cup fresh lime juice (from 2 to 3 limes)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fish sauce
- 1 Tbsp. red pepper flakes
- 1 shallot, finely chopped
- 1 lb. green beans, trimmed
- 1/2 tsp. kosher salt
- 1 tsp. black pepper
- Cooked white rice, for serving
Directions
- Step 1Whisk the soy sauce, oyster sauce, and 1 tablespoon each brown sugar and vegetable oil in a shallow dish. Add the steak, turning to coat. Cover and marinate for 30 minutes at room temperature or up to 8 hours in the refrigerator (remove from the refrigerator about 30 minutes before grilling).
- Step 2Make the dipping sauce: Whisk the lime juice, cilantro, fish sauce, red pepper flakes, shallot, and remaining 2 tablespoons brown sugar in a medium bowl. Cover and refrigerate until ready to use.
- Step 3Preheat a grill or grill pan to medium-high and oil the grates. Toss the green beans with the salt, ½ teaspoon pepper, and the remaining 1 tablespoon vegetable oil.
- Step 4Arrange the green beans in a grill basket or on the grill pan in a single layer. Cook until tender and slightly charred, 3 to 5 minutes per side. Transfer to a bowl and keep warm.
- Step 5Remove the steak from the marinade and pat dry; season with the remaining ½ teaspoon pepper. Grill, turning, until charred, 6 to 7 minutes for medium-rare.
- Step 6Transfer the steak to a cutting board and let rest at least 5 minutes. Slice and serve with the dipping sauce, green beans, and rice.
