Peaches and Cream Shortcakes

Buttery biscuits, juicy peaches, and whipped cream make the dreamiest summer dessert.

I don’t know if there’s a single better summer dessert than these peaches and cream shortcakes. The simple-to-make drop biscuits that serve as the shortcakes are buttery, flaky, subtly sweet, and pretty darn delicious all on their own. But when you split them and stuff them with juicy peaches, a giant dollop of whipped cream, and fresh basil, they get even dreamier. Put this at the top of your list of peach desserts to make while they’re in season. You’ll be glad you did!

Here are a handful of other scrumptious summer desserts and fruit desserts if you need ideas on what to try next.

What other fruit can you use in shortcakes?

Fresh sliced strawberries, blackberries, blueberries, pitted and halved cherries, or sliced plums or nectarines would all be delicious here. Use this recipe as your guide and swap in whatever fruit looks freshest when you go shopping. Just be sure to use about 1 1/2 pounds.

Can you make peaches and cream shortcakes ahead of time?

The biscuits are best the day they’re baked, but you can portion out the dough on a baking sheet and refrigerate it for up to 1 day or freeze it for up to 3 months. Freeze the dough on the baking sheets until firm, then transfer it to an airtight container or freezer bag. Bake the biscuits from the fridge as directed, or from frozen with a few extra minutes added.

You can also prep the peaches and whipped cream up to 1 day ahead and refrigerate them in separate airtight containers. Just keep in mind the peaches will soften and get juicier as they sit, and the whipped cream may need a quick whisk before serving. Wait to assemble the shortcakes until just before serving.

Ingredients

For the biscuits:

  • 3 cups all-purpose flour
  • 2 Tbsp. baking powder
  • 3 Tbsp. sugar
  • 1/2 tsp. kosher salt
  • 1 1/2 sticks (12 Tbsp.) cold salted butter, cut into pieces
  • 1 1/4 cups buttermilk

For the peaches:

  • 4 peaches (about 1 1/2 lb.)
  • 2 Tbsp. sugar
  • Grated zest and juice of 1 small orange

For the cream:

  • 1 (7-ounce) container plain Greek yogurt (about 3/4 cup)
  • 1 cup cold heavy cream
  • 1/2 cup sugar
  • 1/2 tsp. vanilla extract (optional)
  • Chopped fresh basil, for sprinkling (optional)

Directions

    1. Step 1For the biscuits: Preheat the oven to 400˚F. Combine the flour, baking powder, sugar, and salt in a food processor. Add the butter and pulse until the mixture resembles tiny pebbles. (You can also do this in a bowl with a pastry cutter.) Gradually pulse in the buttermilk until the dough just comes together and is no longer crumbly.
    2. Step 2Drop mounds of dough (about 1/2 cup each) onto 2 unlined baking sheets. Bake, rotating the baking sheets halfway through, until the biscuits are golden brown, about 15 minutes. Let cool completely on the baking sheets.
    3. Step 3Meanwhile, for the peaches: Slice the peaches into thin wedges and place in a large bowl. Sprinkle with the sugar, then add the orange zest and juice and stir gently. Set aside until juicy, 15 to 20 minutes.
    4. Step 4For the cream: Combine the yogurt, heavy cream, sugar, and vanilla extract (if using) in a large bowl and beat with a mixer on high speed until stiff (it won’t get as stiff as regular whipped cream).
    5. Step 5Split the biscuits and fill with the peaches and cream. Sprinkle with basil, if you like.
