Ingredients

  • 1/4 cup olive oil
  • 1/2 baguette, sliced 1/2 inch thick (about 16 slices)
  • 2 Tbsp. fig jam or preserves (or you can use plum or apricot preserves)
  • 4 oz. blue cheese, crumbled
  • Small fresh basil leaves, for garnish

Directions

    1. Step 1Heat 2 tablespoons olive oil in a large nonstick skillet over medium heat. Add half the baguette slices and toast until golden and crisp, about 4 minutes per side. Repeat with the remaining 2 tablespoons olive oil and baguette slices. Allow to cool.
    2. Step 2Spread each piece of bread with a little fig jam or preserves. Top with the blue cheese and garnish with basil.
