Oreo Cheesecake Bites

Fans of cookies ‘n cream will swoon over these adorable Oreo cheesecake bites. but those who don’t fancy themselves bakers will love them even more. These no-bake treats are nearly foolproof and are the perfect activity to do with kids—especially during summer, when you’re trying to avoid turning the oven. To make these even easier, skip beating your own whipped cream and sub in thawed whipped topping (like Cool Whip) instead. 

This recipe yields a dozen individual portions, although you may want to consider doubling the recipe if you’re hosting a party. Thanks to the cookie-speckled, not-too-sweet filling, expect people to request—especially because each no-bake cheesecake bit sits atop one full Oreo, too! 

How do you thicken no-bake cheesecake? 

Properly whipped cream is key. If you don’t whip it to stiff peaks, your cream cheese mixture will deflate and never properly set in the refrigerator. Take care to gently fold in the whipped cream to the cream cheese mixture. If you over mix it, you’ll lose the mousse-like, airy consistency. 

Can I make this recipe ahead of time?

Absolutely. These cheesecake bites can be made up to 2 days in advance. Store them in an air-tight container in the refrigerator.

Ingredients

  • 24 chocolate sandwich cookies, like Oreos
  • 12 oz. cream cheese, softened
  • 1/4 cup granulated sugar
  • 3 Tbsp. sour cream
  • 1 tsp. vanilla extract
  • Pinch of kosher salt
  • 1/2 cup heavy cream

Directions

    1. Step 1Line a 12-cup muffin tin with paper liners. Place 1 Oreo in each of the liners. Place the remaining 12 Oreos in a large ziptop bag and crush with a rolling pin.
    2. Step 2In the bowl of stand mixer fitted with a paddle attachment, beat the cream cheese on medium until smooth, about 2 minutes. Add the sugar, sour cream, vanilla and salt. Beat until smooth and creamy, about 2 more minutes.
    3. Step 3In a medium bowl, whisk the heavy cream until stiff peaks form. Add the whipped cream to the cream cheese mixture and fold just until combined. Add 1 cup of the crushed Oreos and fold until combined.
    4. Step 4Spoon the cream cheese mixture into each muffin liner (about 1/4 cup each) and smooth the top. Sprinkle all over with remaining Oreos.
    5. Step 5Chill the cheesecake bites until firm and set, at least 6 hours or up to 2 days.
