Spring is the ideal season to pick up a fresh bunch of asparagus for sautéing. Elegant enough to serve alongside a steak dinner yet quick enough for busy weeknights, sautéed asparagus is one of the easiest and most versatile vegetable side dishes. It’s also a wonderful addition to an Easter menu or Mother's Day brunch. Bright flavors from fresh lemon juice and garlic enhance the natural taste of the asparagus, while a sprinkle of parmesan cheese adds a simple, savory finish.
When it comes to storing asparagus, there’s a reason it’s often displayed in shallow water at the grocery store. Asparagus stays freshest when treated like a bouquet of flowers. After the ends are trimmed, it should be stored upright with the cut ends submerged in about an inch of water. If it will be used the same day, refrigeration isn’t necessary. For longer storage, it’s best to keep it in the refrigerator loosely covered with plastic wrap. For optimal flavor and texture, asparagus should be cooked within three days of purchase.

Ingredients
- 1 bunch of asparagus (about 1 1/4 lb.)
- 1 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- 2 cloves garlic, chopped
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1/2 lemon
- 2 Tbsp. grated parmesan cheese, for serving
Directions
- Step 1Trim the woody ends from the base of the asparagus spears by cutting off the bottom 2 inches or by snapping it off with your hands.
- Step 2Heat a large skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the asparagus in a single layer and cook, turning occasionally, until lightly golden and almost tender, 8 to 10 minutes. (Cut a small piece from the end of one asparagus to see if it's near tender.)
- Step 3Reduce the heat to low. Add the butter, garlic, salt, and pepper, and stir to coat the asparagus. Cook until the garlic is softened and fragrant, 1 to 2 minutes more. Immediately transfer to a serving plate.
- Step 4Just before serving, squeeze the juice from the lemon half over the asparagus and sprinkle with parmesan cheese. Serve immediately.
Tip: Asparagus can be very thin or thick! For super-thin asparagus, cook about two minutes less than recommended. For very thick asparagus, cook about two minutes more.
