When that irresistible craving for a chocolate dessert strikes, this brownie in a mug is within arm's reach of the microwave. The batter comes together right in your coffee cup and bakes to ooey, gooey perfection in under 3 minutes. This brownie recipe is endlessly adaptable. Make a few with your kids for a fun weeknight dessert or for yourself after they've gone to bed (you deserve it). The best part? No one has to share!

What size mug do you use for brownies in a mug?

A mug that's too small might overflow and a mug that’s too large could affect the brownie's rise and bake time. A 12-ounce microwave-safe mug is perfect for this recipe, with just enough room for the batter to rise. To know if your mug is the right size, measure 1 1/2 cups of water and pour into the mug. The water should go right to the rim. 

Why is espresso good with chocolate?

Coffee makes any chocolate dessert taste even more chocolaty (the coffee flavor won't be noticeable). Instant espresso granules will dissolve in the liquid as you mix up the brownie batter—no need to brew it beforehand.

What else can be added to a brownie in a mug?

Make it a nut brownie in a mug by stirring 3 tablespoons of chopped toasted walnuts or pecans in with the chips and sprinkling more on top. Add a fruit swirl by gently swirling 2 tablespoons of your favorite jam into the batter with a fork before microwaving. Let this brownie cool for 5 to 6 minutes before eating, the jam will get hot!

Ingredients

  • 4 Tbsp. unsweetened cocoa powder
  • 4 Tbsp. all-purpose flour
  • 6 Tbsp. light brown sugar
  • 1/2 tsp. instant espresso granules, optional
  • 1/8 tsp. kosher salt
  • 5 Tbsp. whole milk
  • 5 Tbsp. butter, melted
  • 1/4 tsp. vanilla extract
  • 4 Tbsp. semisweet chocolate chips
  • Vanilla ice cream, for serving

Directions

    1. Step 1Into a 12-ounce microwave-safe mug, add the cocoa powder, flour, sugar, espresso granules (if using), and salt. Stir with a fork. Add the milk, butter, and vanilla, and stir with a fork until smooth. Stir in 3 tablespoons of the chocolate chips. Use a damp paper towel to wipe excess batter off the sides of the mug.
    2. Step 2Microwave for 2 minutes 45 seconds on high, then sprinkle remaining 1 tablespoon chocolate chips on top. Let the brownie stand for 2 minutes before eating. Serve warm with vanilla ice cream.
