Crumb Cake

It's piled high with cinnamon, butter, and streusel topping!

For those who not so sneakily steal just the buttery streusel off muffins, pies, and bars... try this crumb cake recipe! It's got about an equal crumb-to-cake ratio—the kind of math that's hard not to love. The classic vanilla homemade cake is just sturdy enough to support lots (and lots!) of the cinnamon-flecked crumbles while still being wonderfully tender. Remember not to press the crumb topping into the batter underneath so the cake reaches its full height and the topping gets nicely golden. This cake is the perfect breakfast-in-bed treat with a cup of strong coffee.

Can you use all-purpose flour instead of cake flour?

These two types of flour are not a one-for-one swap: Cake flour has a lower protein content than all-purpose flour, which is what makes this cake extra tender. If you don't have cake flour, use all-purpose flour but swap 2 tablespoons of the flour for cornstarch. This will lower the protein content to be about the same as cake flour. The cake might be slightly less tender than a cake made with cake flour, but will still be delicious.

What's the difference between coffee cake and crumb cake?

Some recipes use the name interchangeably, but the usual difference is in the amount of streusel topping: A coffee cake has a generous sprinkle, while a crumb cake is nearly half of the cake itself. Coffee cakes also often have a cinnamon and swirl through the center.

Ingredients

For the Crumb Topping:

  • 1 2/3 cups cake flour
  • 1/2 cup packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 1/2 cup salted butter, melted

For the Cake:

  • 1 1/4 cups cake flour
  • 3/4 cup granulated sugar
  • 1 1/4 tsp. baking powder
  • 1/4 tsp. kosher salt
  • 4 Tbsp. salted butter, melted and cooled slightly
  • 1 large egg
  • 2/3 cup heavy cream
  • 1 1/2 tsp. vanilla extract
  • Powdered sugar, for dusting

Directions

    1. Step 1Preheat the oven to 325°. Line an 8-by-8-inch square baking pan with parchment paper overhanging on all sides.
    2. Step 2For the crumb topping: Stir together the flour, brown sugar, granulated sugar, cinnamon, and salt in a medium bowl. Add the melted butter, and stir until combined. Stir in the flour, just until large clumps form. (Do not over-mix.)
    3. Step 3 For the cake: Whisk the flour, granulated sugar, baking powder, and salt in a large bowl. Whisk together the melted butter, egg, cream, and vanilla in a medium bowl. Add the butter mixture to the flour mixture, and stir just until combined.
    4. Step 4Pour the cake batter into the prepared baking pan, and spread in an even layer. Use your fingers to break the crumb topping into various-sized pieces, and carefully sprinkle evenly over the top of the batter, covering the batter completely. Do not press the crumb topping into the batter.
    5. Step 5Bake in the preheated oven until golden brown and a wooden pick inserted in the center of the cake comes out clean, 40 to 45 minutes. Let cake cool completely in the pan on a wire rack, about 3 hours. Remove cake from pan using the parchment overhang. Cut the cake into 6 servings, and dust with powdered sugar.
