These cheesy zucchini pizza bites are a dream snack for both veggie and pizza lovers alike! In this recipe, tender zucchini slices are transformed into delicious mini pizzas with the help of tomato sauce, cheese, and pepperoni piled on top. During the summer, when farmers' markets and backyard gardens are overflowing with fresh zucchini, having a variety of zucchini recipes on hand is essential. Fortunately, zucchini is incredibly versatile and can be used in a multitude of dishes, from chocolaty zucchini bread to crispy fritters and, of course, these perfectly poppable pizza bites! Kids will love 'em for an after-school snack.

How do you prepare zucchini for pizza bites?

Zucchini is a watery summer vegetable: Cooking it first without the toppings helps draw out some moisture. Broiling is a quick and easy way to do this—just brush the slices with oil and season them with salt and pepper. In under 10 minutes, you'll achieve perfectly golden, tender zucchini rounds, ready to be transformed into pizza bites.

This recipe can be doubled, tripled, or even quadrupled. You may need multiple baking sheets and to do some strategic oven shuffling, but these easy zucchini pizza bites are perfect for feeding any crowd.

Ingredients

  • 1 medium zucchini (about 1/2 lb.)
  • 1 Tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/3 cup marinara sauce or homemade pizza sauce
  • 3/4 cup shredded mozzarella (3 oz.)
  • 2 Tbsp. grated parmesan cheese
  • 1/4 cup sliced mini pepperoni
  • 1 Tbsp. flat-leaf parsley, chopped

Directions

    1. Step 1Place an oven rack on the upper third of the oven. Turn the oven to broil.
    2. Step 2Slice the zucchini into ¼-inch-thick rounds. Place the zucchini on a baking sheet. Brush both slides with the oil and sprinkle with the salt and pepper.
    3. Step 3Broil until the zucchini is tender and lightly golden, 6 to 8 minutes, flipping once halfway through.
    4. Step 4Top each zucchini round with some marinara sauce, mozzarella, parmesan, and a few mini pepperoni.
    5. Step 5Broil until the cheese is golden and melty, 1 to 2 minutes. Sprinkle with parsley and serve.

Tip: Customize the pizza bites with your favorite pizza toppings, such as cooked sausage, bell pepper, onion, olives, basil, or Alfredo sauce.
