Refrigerator Pickles

Ingredients

  • 2 English cucumbers, sliced about 1/8 inch thick
  • 3 Tbsp. chopped fresh dill
  • 1 tsp. mustard seeds
  • 2 scallions, thinly sliced (white parts only)
  • 1 1/2 teaspoons kosher salt
  • 2/3 cup white wine vinegar

Directions

    1. Step 1In a 1-quart mason jar, layer a few cucumber slices, some of the dill, some of the mustard seeds and a little of the scallions. 
    2. Step 2Continue layering the cucumber slices, dill, mustard seeds and scallions, packing everything in as you go. Sprinkle in the salt and pour in the white wine vinegar. Turn the jar over a few times to mix, then add enough cold water to cover the ingredients. 
    3. Step 3Refrigerate for at least 8 hours before eating. They'll keep in the refrigerator for up to 2 weeks.
