Shrimp Alfredo… swoon! I don't make it often because when I do, I can't resist eating the entire pan myself. This is such a speedy recipe. All you have to do is boil some pasta, sauté the shrimp, and prepare the sauce—which takes all of five minutes. If I'm really in a hurry, I'll cook the pasta and the shrimp and sauce all at the same time and it's ready even quicker. This shrimp Alfredo is perfect to make for company but it’s just as great for weeknight meals since it comes together so quickly. Pair it with this roasted broccoli and garlic bread, and you’re good to go!

Can you use frozen shrimp for shrimp Alfredo?

Yes! I love keeping a bag stashed in my freezer for easy meals like this. Starting with frozen shrimp that has already been peeled and deveined is a major time-saver here. To thaw it, simply transfer the sealed bag to the fridge the night before and let it defrost slowly. I like to place the bag on a rimmed sheet tray before putting it in the fridge to catch any drips. If you need to speed things up, place the shrimp in a zip-top bag and submerge it in cold water, changing the water every 30 minutes until thawed.

What type of pasta works best with Alfredo sauce?

Fettuccine is the classic choice because it holds that creamy sauce so well, but linguine or spaghetti work great, too. If you prefer short pasta, try cavatappi or farfalle.

Can you add vegetables to shrimp Alfredo?

Absolutely! Cooked broccoli, peas, or spinach are all delicious additions and add a pop of color to the creamy pasta. Just toss them together with the pasta and sauce at the end.

Can you make shrimp Alfredo ahead of time?

This dish is best served fresh, but you can cook the pasta and shrimp a few hours ahead, refrigerate them, then toss them in the sauce to warm through right before serving.

How long does shrimp Alfredo last in the fridge?

Leftovers can be stored in an airtight container in the refrigerator for up to two days. Reheat shrimp Alfredo gently on the stovetop or in the microwave, adding a splash of milk or cream to help loosen the sauce. Warm it just until it’s heated through to avoid overcooking the shrimp.

Ingredients

  • 12 oz. fettuccine
  • 2 Tbsp. olive oil
  • 1 1/2 sticks (12 Tbsp.) salted butter
  • 1 lb. jumbo shrimp, peeled and deveined
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 1/2 cups heavy cream
  • 2 garlic cloves, minced
  • 2 cups freshly grated parmesan cheese (about 8 oz.)
  • 1/2 cup fresh parsley, chopped, plus more for serving

Directions

    1. Step 1Cook the pasta according to the package directions. Drain but do not rinse.
    2. Step 2In a large skillet, heat the olive oil and 2 tablespoons of the butter over medium-high heat. When the oil is hot and the butter has melted, add the shrimp and sprinkle with a generous pinch of salt and pepper. Cook, stirring occasionally, until the shrimp are pink and cooked, 2 to 2 1/2 minutes. Quickly remove the shrimp to a plate and set aside.
    3. Step 3Add the heavy cream and remaining 10 tablespoons butter to the drippings in the skillet and cook for an additional 2 to 3 minutes, reducing the heat as needed to make sure it doesn't boil. Stir in the garlic and 1 1/2 cups of the parmesan. Add the shrimp and pasta to the skillet and coat in the sauce, then add the parsley and toss to combine. Taste and adjust the seasonings as needed.
    4. Step 4Sprinkle the pasta with the remaining 1/2 cup parmesan and more parsley. Serve straight from the skillet.
