Chocolate Ganache
- 4 oz. semisweet chocolate, broken into pieces
- 1/2 cup heavy cream
Sweetened Yogurt
- 3/4 cup plain Greek yogurt
- 5 Tbsp. powdered sugar
Fruit and Garnish
- 1 small watermelon (about 5 pounds), cut into 1-inch-thick rounds
- 2 cups sliced strawberries (about 10 ounces)
- 1 1/2 cups blueberries (about 9 ounces)
- 1/2 cup pomegranate seeds (about 3 ounces)
- 4 kiwis, sliced
- 1 bunch fresh mint
- 1 (4-ounce) bar white chocolate
Directions
- Step 1For the chocolate ganache: Place the semisweet chocolate in a medium heatproof bowl. In a small saucepan, heat the cream over medium heat until it starts to simmer. Pour the hot cream over the chocolate, let sit 1 minute, then stir to completely melt. Set aside to cool slightly, about 10 minutes.
- Step 2For the sweetened yogurt: In a medium bowl, whisk together the yogurt and powdered sugar until smooth.
- Step 3Spread the watermelon rounds with the sweetened yogurt. Top with the strawberries, blueberries, pomegranate seeds, kiwis, and mint leaves. Drizzle with the chocolate ganache and use a vegetable peeler or cheese grater to shave the white chocolate over the tops. Cut into wedges for serving.
