Root Beer Float Pie
If you grew up loving root beer floats, you're going to adore this pie.

You know how some desserts try to taste like other desserts and just kind of miss the mark? Not this creamy, dreamy pie. It tastes exactly like a root beer float. Close your eyes and you’ll swear you’re sitting at the counter of your favorite old-school diner, sipping on the real deal.
The base is a simple graham cracker crust—nothing fancy! And the filling has all the best things in life—whipped cream, a box of vanilla pudding mix, and good, ol' fashioned root beer. To really drive the root beer flavor home, I also mix in a little root beer extract, which you can find on the baking aisle of your grocery store. It's really concentrated and makes all the difference. Once the filling is in the crust, I top the pie with more whipped cream and cherries from the jar, then set it in the fridge to firm up before slicing. This dessert has such an old-fashioned feel, like one of those summer pie recipes you’d spot at a church potluck!

Can you use a store-bought graham cracker crust?
Yes! If you don’t want to make a homemade graham cracker crust, a store-bought one works just fine. Just be sure to use a standard 9-inch crust.
Why is my root beer float pie runny?
There are a few reasons your pie might not set up quite right. First, make sure you whip the cream to firm peaks—that means when you lift the whisk, those peaks should stand up nice and tall without drooping. And when it comes time to mix everything together, gently fold the whipped cream into the pudding mixture using a rubber spatula until the two are almost combined, but not completely incorporated (some streaks are fine!). Over-mixing can cause the cream to deflate and leave your pie runny. Finally, give the pie plenty of time to chill. It needs a full two hours in the fridge (or longer!) to firm up and slice beautifully.

Ingredients
Crust
- 12 whole graham cracker sheets
- 2 Tbsp. granulated sugar
- 6 Tbsp. salted butter, melted
Filling
- 2 cups cold heavy cream
- 2/3 cup powdered sugar
- 1 cup root beer, chilled
- 1/4 cup cold whole milk
- 1 (3.4-ounce) package instant vanilla pudding mix
- 2 tsp. root beer extract
- 8 maraschino cherries with stems, for garnish
Directions
- Step 1For the crust: Preheat the oven to 350˚F.
- Step 2In a food processor, combine the graham crackers and granulated sugar. Pulse until fine crumbs form. Pour in the melted butter and pulse until the crumbs are well coated and stick together when pinched. Press the mixture into the bottom and up the sides of a 9-inch pie plate (not deep-dish) using the bottom of a measuring cup or glass.
- Step 3Bake until just set, about 10 minutes. Let cool, about 1 hour.
- Step 4For the filling: In the bowl of a stand mixer fitted with the whisk attachment, combine the heavy cream and powdered sugar and whip on medium-high speed until firm peaks form, 2 to 3 minutes.
- Step 5Meanwhile, in a large bowl, whisk together the root beer, milk, pudding mix, and root beer extract until thick, about 2 minutes. Using a rubber spatula, gently fold 2 cups of the whipped cream into the root beer mixture until almost completely blended. Pour the filling over the cooled crust and smooth out with a rubber spatula. Top the pie with the remaining whipped cream.
- Step 6Garnish with the maraschino cherries and chill at least 2 hours and up to 6 hours before serving.
