You’ve had pie. You’ve had baked pasta. And you’ve probably twirled your fair share of peppery cacio e pepe. But all three in one glorious, golden-topped dinner? You heard that right. Meet cacio e pepe pie. In this recipe, spaghetti is tossed in a rich, creamy cheese sauce with plenty of cracked black pepper, then baked in a springform pan until it slices like a dream. What pasta works best for cacio e pepe pie?
Spaghetti is classic, but you can also use bucatini or linguine. Just make sure to undercook the noodles slightly so they don’t get mushy while baking.

Ingredients

  • Cooking spray
  • 3/4 tsp. kosher salt, plus more for the pasta
  • 1 lb. spaghetti
  • 8 oz. cream cheese, cubed and at room temperature
  • 3 large eggs, at room temperature 
  • 1 1/4 cups half-and-half
  • 2 3/4 cups shredded mozzarella cheese (about 11 ounces)
  • 1 cup plus 2 tablespoons grated parmesan or pecorino romano cheese, plus more for serving
  • 1 Tbsp. black pepper, plus more to taste
  • 2 Tbsp. salted butter, diced
  • Green salad, for serving

Directions

    1. Step 1Preheat the oven to 400˚F. Spray a 9-inch round springform pan with cooking spray. Bring a large pot of salted water to a boil. Add the pasta and cook until not quite al dente and still chewy, 5 to 6 minutes. Drain.
    2. Step 2Whisk together the cream cheese and eggs in a large bowl until smooth. Gradually pour in the half-and-half, whisking until combined. Stir in 2½ cups of the mozzarella, 1 cup of the parmesan, and the salt and pepper. 
    3. Step 3Add the spaghetti to the bowl, tossing to coat. Transfer to the prepared springform pan and top with the remaining ¼ cup mozzarella and 2 tablespoons parmesan.
    4. Step 4Dot the spaghetti with the butter and sprinkle generously with pepper. Bake until golden brown around the edges and bubbling, about 30 minutes. Let cool in the pan for 15 minutes, then remove the springform ring and transfer the pie to a board or platter. Sprinkle with more parmesan, slice into wedges, and serve with salad.
