If you’ve ever craved a cookie that’s rich, fudgy, and almost brownie-like—but without any flour—then you’re going to fall head over heels for these flourless chocolate cookies. They’re crisp around the edges, soft in the middle, and packed with deep chocolate flavor. Plus, they come together with just a handful of pantry staples you probably already have on hand!

This recipe relies on whisked egg whites to create that signature glossy, chewy texture, while semisweet chocolate chips bring the intense cocoa punch. A touch of cream of tartar helps stabilize the meringue, making sure your cookies bake up light and airy instead of flat. And let’s not forget the pecans—they add the perfect bit of crunch and nutty depth, balancing all that chocolatey goodness.

These cookies are naturally gluten-free, which makes them a wonderful treat for anyone avoiding wheat but still longing for something sweet. They’re also versatile—you can swap the pecans for walnuts, leave the nuts out altogether, or even stir in a handful of dried fruit for a fun twist. How long do these flourless chocolate cookies last?

Flourless cookies will stay fresh for up to 3 days when stored in an airtight container at room temperature. (They keep their texture best if you layer them with a piece of parchment paper in between. Because of their delicate nature, freezing it is not recommended.

Are flourless chocolate cookies gluten-free?

Yes! these flourless cookies are naturally gluten-free because they don’t contain any wheat flour. Instead, they rely on whipped egg whites and melted chocolate to create their chewy texture. This makes them a perfect dessert for anyone avoiding gluten but still craving something indulgent. Just be sure to double-check the labels on your chocolate chips and other add-ins to confirm they’re all certified gluten-free.

Ingredients

  • 2 cups semisweet chocolate chips (about 12 ounces)
  • 3 large egg whites, at room temperature
  • 1/2 tsp. vanilla extract
  • 1/8 tsp. cream of tartar
  • Pinch of kosher salt
  • 3/4 cup sugar
  • 1/2 cup chopped pecans

Directions

    1. Step 1Preheat the oven to 350˚F and line 2 baking sheets with parchment paper.
    2. Step 2In a medium microwave-safe bowl, melt 1 1/2 cups of the chocolate chips in the microwave, stirring every 15 seconds, until smooth and melted, about 1 minute. Set aside to cool slightly.
    3. Step 3In a stand mixer fitted with a whisk attachment, beat the egg whites, vanilla, cream of tartar, and kosher salt on medium speed until the mixture is frothy and soft peaks form, about 1 minute. With the mixer running, gradually add the sugar, 1 tablespoon at a time, waiting about 15 seconds between each addition. Once all of the sugar has been added, beat until the egg whites are glossy and stiff but not dry, about an additional 5 minutes. 
    4. Step 4Add one-third of the meringue to the bowl of melted chocolate, stirring to combine; the chocolate will initially clump and become grainy, but continue to stir and it will come together. Using a rubber spatula, gently fold the chocolate mixture into the rest of the meringue until no streaks remain. Fold in the pecans and remaining 1/2 cup chocolate chips.
    5. Step 5Drop heaping tablespoonfuls of the meringue on the baking sheets, spacing them about 1 inch apart.
    6. Step 6Bake until the cookies appear dry on the outside but are still soft when gently pressed, 12 to 14 minutes. Let cool for 10 minutes on the baking sheets, then transfer to a wire rack to cool completely.
