Crispy Potatoes Halves with Cilantro Garlic Sauce

If there’s one thing I can never resist, it’s a pan of crispy potatoes fresh out of the oven. They’re golden on the outside, tender on the inside, and totally addictive—especially when you drizzle them with this zesty cilantro-garlic sauce. The combination is bright, garlicky, a little spicy, and completely unbeatable.

This recipe is one of my go-tos for weeknights, but it also makes an amazing side dish for holidays, cookouts, or casual dinners. It's truly great year-round! The potatoes are first seared cut-side down in a skillet so they get a deep, golden crust, then roasted in the oven until fluffy and soft in the middle. Meanwhile, the sauce comes together in just minutes with fresh cilantro, lime juice, garlic, and jalapeño.

Spoon the bold, herby sauce right over the hot potatoes, sprinkle with a little flaky salt, and watch them disappear fast. They taste great paired with roasted turkey, prime rib, or baked salmon but honestly, I could eat them straight off the sheet pan. Whether you’re making them for a crowd or just for yourself (no judgment here!), these crispy potato halves are simple, flavorful, and guaranteed to steal the show.

Can you make the cilantro-garlic sauce less spicy?

Of course! Just use half a jalapeño and remove the seeds and ribs, or leave it out entirely if you prefer a milder flavor. You’ll still get plenty of zing from the garlic and lime juice.

Can you make crispy potato halves with cilantro-garlic sauce ahead of time?

Yes! You can cook the potatoes and make the sauce up to 1 day ahead. Just store them separately in airtight containers in the refrigerator. Reheat the potatoes in a 400°F oven until hot and crisp, 10 to 15 minutes, then drizzle with the sauce just before serving.

Can you substitute another herb if you don't like cilantro?

You sure can. Parsley is a great alternative if you’re not a cilantro fan since it has a similar texture and a bright, fresh flavor. Or try a combination of parsley and mint for a little kick.

Ingredients

POTATOES

  • 1 1/2 lb. creamer potatoes, halved
  • 2 Tbsp. olive oil 
  • 2 tsp. kosher salt
  • 1 tsp. black pepper
  • 1 tsp. ground cumin
  • 2 Tbsp. salted butter

CILANTRO GARLIC SAUCE

  • 1/2 cup chopped fresh cilantro
  • 2 garlic cloves, grated 
  • Grated zest and juice of 2 limes
  • 1 jalapeño pepper, minced
  • 2 tsp. olive oil
  • 1/2 tsp. kosher salt 
  • 1/4 tsp. black pepper
  • Flaky salt, for serving 

Directions

    1. Step 1Make the potatoes: Preheat the oven to 400˚. Toss the potatoes with the olive oil, kosher salt, pepper and cumin in a large bowl. 
    2. Step 2Melt the butter in a large cast-iron skillet over medium heat. Add the potatoes cut-side down and cook, without touching or turning, until golden, 6 to 8 minutes. Toss the potatoes, then transfer the skillet to the oven and roast until the potatoes are soft in the center with a deep golden crust, 18 to 20 minutes. 
    3. Step 3Make the cilantro-garlic sauce: Meanwhile, mix together the cilantro, garlic, lime zest, lime juice, jalapeño, olive oil, salt and pepper in a small bowl. Transfer the potatoes to a platter. Top with the sauce and sprinkle with flaky salt.
