I don’t know if there’s a single dish on this planet that excites me more than mushroom risotto. Mushrooms are one of my favorite foods, especially when you sauté them in a little butter until they’re golden brown and deeply savory. Pure heaven! Pair that with creamy, slow-cooked risotto, and you’ve officially achieved all of my comfort food dreams in one glorious dish.

This mushroom risotto is the perfect antidote for cold winter days. It's rich, buttery, cheesy, and pretty much everything I crave this time of year. Plus, it's one of those rice dishes that you can serve as your main course (it’s filling!) or pair with something like steak or pork for a delicious side dish.

What kind of rice is best for mushroom risotto?

Use arborio rice for this recipe. It’s a short-grain Italian rice that releases plenty of starch as it cooks, giving the risotto its signature creamy texture while staying tender but not mushy. Avoid long-grain rice like jasmine or basmati, as well as any instant rice—these varieties don’t release enough starch to create that thick, luxurious risotto texture.

Can you make mushroom risotto ahead of time?

Mushroom risotto is at its absolute best when it’s made and served right away—you really can’t beat the silky, creamy texture of freshly cooked risotto. As it sits, the rice continues to absorb liquid, which causes the risotto to thicken and lose some of that signature creaminess. That said, leftovers can still be stored in the fridge and reheated with delicious results. Keep the cooked risotto in an airtight container in the refrigerator for up to three days. When you’re ready to reheat it, warm it gently over medium-low heat on the stove, adding a splash of broth as needed to loosen it back up.

Ingredients

  • 6 to 7 cups low-sodium chicken broth
  • 6 Tbsp. olive oil
  • 4 Tbsp. salted butter
  • 1 lb. mixed mushrooms (such as cremini, shiitake, and oyster mushrooms), sliced
  • 1 Tbsp. fresh thyme
  • 1/4 tsp. black pepper, plus more to taste
  • 1 1/2 tsp. kosher salt, plus more to taste
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 1 1/2 cups arborio rice
  • 1 cup dry white wine
  • 1/2 cup grated parmesan cheese (about 2 ounces), plus more for serving
  • 1/4 cup heavy cream
  • Juice of 1/2 lemon
  • 1/4 cup chopped fresh parsley

Directions

    1. Step 1In a small saucepan, bring the chicken broth to a low simmer over medium-low heat. Reduce the heat to low to keep the broth warm.
    2. Step 2In a large Dutch oven, heat 2 tablespoons of the oil and 1 tablespoon of the butter over medium-high heat. Add about half of the mushrooms and cook, stirring occasionally, until golden brown, 7 to 8 minutes. Transfer to a plate. Add 2 tablespoons oil and 1 tablespoon butter to the pot and repeat with the remaining mushrooms. Return all the mushrooms to the pot, stir in the thyme, pepper, and 1/2 teaspoon salt, and cook over medium-high heat for 1 minute. Transfer the mushroom mixture to the plate.
    3. Step 3Add the remaining 2 tablespoons oil and 2 tablespoons butter to the pot, along with the garlic and shallot. Cook over medium-high heat until fragrant, about 1 minute.
    4. Step 4Add the arborio rice and cook, stirring constantly, until very lightly toasted, about 1 minute. Add the wine and cook, stirring constantly, until almost completely evaporated, about 1 minute.
    5. Step 5Reduce the heat to low and stir in the remaining 1 teaspoon salt. Add 1/2 cup of the warm chicken broth and let simmer, stirring constantly, until the rice has absorbed almost all of the broth, 2 to 3 minutes. Continue adding the broth, 1/2 cup at a time, stirring often between additions, until the mixture is creamy and the rice is tender with a slight bite, 20 to 25 minutes total. Start checking for doneness after adding about 5 cups of the broth; if the rice is too firm, continue adding broth.
    6. Step 6Stir in three-quarters of the sautéed mushrooms, along with the parmesan and heavy cream. Adjust the consistency with additional broth, if needed. Stir in the lemon juice and season to taste with salt and pepper.
    7. Step 7Top the risotto with the remaining mushrooms. Sprinkle with the parsley and some parmesan.
