Warm pretzels have a way of making everyone feel very happy, very fast. There's something about that chewy, salty exterior that just flips a switch, and suddenly people are hovering around the snack table like it’s their job. These little pretzel bites are exactly that kind of food—casual, cozy, and impossible to ignore once they come out of the oven.

Frozen dinner roll dough does most of the heavy lifting (thank you very much), and a quick dunk in baking soda water gives you that classic pretzel flavor and texture. But the real magic comes right at the end: a generous brush of honey butter on the pretzel bites while they're warm from the oven adds just enough sweetness and richness to take you back to the pretzel stand at the mall—you know, the one you could smell from three stores away.

The dipping sauce also deserves a moment of its own. This buffalo-ranch combo is creamy, tangy, just spicy enough, and basically begs you to double-dunk. These pretzel bites are perfect for game day—Super Bowl included—but they’re just as welcome on a random Friday family movie night or as a party appetizer.

Pretzel bites are made from dough that’s briefly boiled in baking soda water, then baked until golden and chewy. This recipe uses frozen dinner roll dough for an easy shortcut.

Ingredients

For the buffalo-ranch sauce:

  • 1/4 cup mayonnaise
  • 2 Tbsp. sour cream
  • 2 Tbsp. Buffalo-style hot sauce (such as Frank's Red Hot)
  • 1 tsp. chopped fresh chives
  • 1 tsp. chopped fresh dill
  • 1 tsp. Worcestershire sauce
  • 1/4 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. cayenne pepper
  • 1 garlic clove, grated

For the pretzel bites:

  • Cooking spray, for the baking sheets
  • All-purpose flour, for dusting
  • 12 (38-gram) frozen dinner roll dough balls, thawed and risen according to package instructions (about 1 pound)
  • 1/4 cup baking soda
  • 1 large egg, beaten
  • 2 tsp. coarse salt
  • 3 Tbsp. salted butter
  • 1 Tbsp. honey

Directions

    1. Step 1For the Buffalo-ranch sauce: In a medium bowl, whisk together the mayonnaise, sour cream, hot sauce, chives, dill, Worcestershire sauce, kosher salt, black pepper, cayenne pepper, and garlic. Cover and refrigerate until ready to use.
    2. Step 2For the pretzel bites: Preheat the oven to 425°F. Line a baking sheet with paper towels. Spray 2 baking sheets with cooking spray.
    3. Step 3In a medium saucepan, bring 5 cups water to a boil.
    4. Step 4On a lightly floured surface, roll each dough ball into a 4-inch rope. Use a bench scraper or a knife to cut the dough into four 1-inch pieces.
    5. Step 5Add the baking soda to the boiling water (it will bubble up). Working in batches, drop the pretzel bites in the water for about 15 seconds, then use a slotted spoon or spider to transfer them to the paper towel-lined baking sheet.
    6. Step 6When all the pretzel bites have been boiled, divide them between the greased baking sheets. Brush the pretzel bites with the beaten egg and sprinkle with coarse salt. Bake until golden brown, 10 to 12 minutes.
    7. Step 7Meanwhile, melt the butter in a small microwave-safe bowl in the microwave. Stir in the honey. Brush the honey butter on each pretzel bite. Serve with the Buffalo-ranch sauce for dipping.
