This hearty black bean soup speaks to my soul, probably because beans are my love language, and spicy, flavorful, delicious Tex-Mex food is my second love language.

This recipe is a little different from my classic black bean soup because it's got more spice and a deeper flavor since you sauté the aromatics. It also has a creamier consistency, brought on by puréing some of the beans in a blender and then adding them back to the pot. What you're left with is a thick, rich, satisfying soup with a wonderful mix of flavor and texture. It's one of those soup recipes you can make on a Sunday and enjoy throughout the week—it gets better the longer it sits! Make some cheese quesadillas or a skillet of cornbread, set out all the fixin's, and dinner is done.

Do you have to soak the beans for hearty black bean soup?

Yes, you do—but you’ve got options, depending on how much time you have. If you plan ahead, soak the beans in cold water overnight (or for at least six hours). If you're more of a last-minute person, follow the quick-soak method: bring the beans to a boil, then turn off the heat and let them sit in the liquid for an hour. Soaking the beans—no matter which method you choose—gives them a head start on softening, which means a shorter cooking time and more evenly cooked, tender beans in the finished soup.

What are the best toppings for hearty black bean soup?

I love finishing a bowl with a dollop of sour cream, some diced avocado, a sprinkle of cilantro, a handful of corn tortilla strips, and a squeeze of fresh lime. But this is one place where you can really have fun with toppings. Try shredded cheddar or cotija, diced red onion, pico de gallo, fresh jalapeño slices, or even crushed tortilla chips—just about anything goes.

Can you freeze hearty black bean soup?

Yes, this soup freezes like a dream! Once it has completely cooled, transfer it to an airtight container and freeze for up to three months. Let the soup thaw in the refrigerator overnight, then reheat it over medium-low heat on the stove, splashing in a little extra broth as needed to return it to the perfect soupy consistency.

Ingredients

  • 1 lb. dried black beans
  • 4 Tbsp. salted butter
  • 5 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1 medium yellow onion, diced
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 4 cups low-sodium chicken or vegetable broth
  • 1 Tbsp. dried oregano
  • 2 bay leaves
  • 1 Tbsp. kosher salt, plus more to taste
  • Sour cream, diced avocado, cilantro, corn tortillas (cut into strips), and lime wedges, for serving

Directions

    1. Step 1Place the dried beans in a colander, rinse them well, and pick out any stones or imperfect beans. 
    2. Step 2For the overnight soak method: Transfer the beans to a large bowl or pot and cover with cold water. Refrigerate for at least 6 hours and up to 12 hours. Drain and rinse with cold water.
    3. Step 3For the quick-soak method: Alternatively, transfer the beans to a medium pot and cover with hot water. Bring to a boil and cook for 2 minutes. Turn off the heat, cover the pot, and let the beans soak for 1 hour. Drain and rinse with cold water.
    4. Step 4In a Dutch oven or large pot, melt the butter over medium-high heat. Add the garlic, bell pepper, jalapeño, and onion. Cook, stirring occasionally, until softened, about 5 minutes. Sprinkle in the chili powder and cumin; stir and cook until fragrant, about 1 minute. Add the drained beans, chicken broth, oregano, bay leaves, and 2 cups water. Bring to a boil, then reduce the heat to low, cover, and simmer for 1 1/2 hours.
    5. Step 5Remove the bay leaves and stir in the salt. Scoop out 2 cups of the beans and transfer to a blender. Blend until smooth, then return to the pot. Cover and continue simmering until the soup thickens slightly, about 30 minutes. For a thicker soup, simmer for an additional 30 minutes.
    6. Step 6Taste for seasoning and add more salt if desired. Serve the soup with sour cream, avocado, cilantro, tortilla strips, and lime wedges.

Tip: Hearty black bean soup will last in an airtight container in the refrigerator for up to 4 days.
