St. Patrick’s Day Marshmallow Cereal Treats

These chewy, gooey bars have a surprise flavor twist!

Little cereal treats like these are so easy to make— not to mention gooey, sticky, sweet, and adorable. This St. Patrick’s Day version has all the marshmallow goodness and crispy rice cereal you’d expect, but with a magical flavor twist: Key lime pie! There’s fresh lime juice and zest stirred into the melted marshmallows, along with graham cereal so you get that graham cracker crust flavor. They’re also drizzled with green-tinted white chocolate. Fun. Festive. Delicious!

Pull your kids into the kitchen to help make these treats (even a few days ahead, if you want), then bring them to whatever type of celebration is on your calendar—a school party, a parade, or just a family meal full of green foods for St. Patrick’s Day at home.

Why are my marshmallow cereal treats hard instead of chewy?

This can happen if you cook the marshmallow mixture too long or if you pack down the treats too tightly in the baking dish. For the softest, chewiest texture, melt the marshmallows just until they’re smooth and press the treats gently into the buttered dish—try not to compact them too much! Be sure to store them properly, too. (More on that below!)

What’s the best way to store marshmallow cereal treats?

Pack them in an airtight container with parchment paper between layers to keep the white chocolate looking pretty. Store them at room temperature for up to two days.

Ingredients

  • 5 Tbsp. salted butter, plus more for the pan
  • 16-ounce bag mini marshmallows
  • 4 tsp. grated lime zest
  • 1/4 cup fresh lime juice
  • 5 cups crispy rice cereal
  • 1 cup graham cereal (such as Golden Grahams)
  • 4 oz. white chocolate, chopped
  • 1/2 tsp. coconut oil
  • 1 drop green food coloring

Directions

  • Generously butter a 9-by-13-inch baking dish. Melt the butter in a large pot over medium heat. Stir in about two-thirds of the marshmallows until they’re fully melted. Remove from the heat and stir in 3 teaspoons lime zest and all of the lime juice.

    Pour in the rice cereal, graham cereal and remaining marshmallows and fold gently until combined. Pour the mixture into the buttered pan and press flat. Set aside to cool.

    Put the white chocolate in a heatproof bowl and set over a saucepan of simmering water (do not let the bowl touch the water). Cook, stirring, until melted. Remove the bowl from the pan. Stir in the coconut oil, then the remaining 1 teaspoon lime zest. Stir in the green food coloring.

    Drizzle the white chocolate mixture over the cereal treats and refrigerate until cooled, about 30 minutes. Cut into pieces.
