If there’s one thing I believe with my whole butter-loving heart, it’s that bacon makes everything better—and these bacon-wrapped green bean bundles are living, crispy proof. Tender green beans are wrapped in a sweet-and-spicy brown sugar-coated bacon slice, and then roasted until caramelized and irresistible. It’s the kind of side dish that disappears faster than the main course!

These little bundles are perfect for Easter dinner or a Christmas feast. They're delicious alongside a glazed ham or roast leg of lamb. They look adorable on a platter, and most importantly, they taste downright decadent. And if you’ve got picky eaters at your table? Well, this is your secret weapon. Even the most veggie-resistant folks tend to “accidentally” go back for seconds (and thirds).

Whether you’re hosting a holiday gathering or just need a fun, crowd-pleasing vegetable side, these bundles check every box: easy, flavorful, and just a little indulgent.

Can you make bacon-wrapped green bean bundles ahead of time?


Yes! Making these (or some of the components) ahead of time is super easy and will save you time when you're ready to serve them. You can blanch the green beans, par-cook the bacon, and assemble the bundles up to one day ahead; hold them in an airtight container in the refrigerator and let them sit at room temperature for 20 to 30 minutes before roasting. Roast just before serving for the best crispy bacon texture.

How long do leftover bacon-wrapped green bean bundles last?


Store any leftover bundles in an airtight container in the refrigerator for up to three days. When you're ready to eat, reheat them on a baking sheet at 375 degrees Fahrenheit until warmed through and the bacon re-crisps. I don't recommend microwaving leftovers because the bacon will get rubbery.

Ingredients

  • Nonstick cooking spray
  • 1/3 cup light brown sugar
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. black pepper
  • 5 strips bacon (not thick-cut), halved crosswise
  • 1/2 tsp. kosher salt, plus more for the pot
  • 1 lb. green beans or haricot verts, trimmed
  • 1 Tbsp. olive oil
  • 1/2 tsp. garlic powder 

Directions

    1. Step 1Preheat the oven to 400˚F. Place a rack on a rimmed baking sheet lined with parchment and lightly coat it with nonstick spray.
    2. Step 2In a shallow dish, combine the brown sugar, cayenne, and 1/4 teaspoon black pepper. Coat the bacon pieces in the mixture, pressing lightly on both sides so it adheres.
    3. Step 3Arrange the bacon on the prepared baking sheet. Bake until the bacon is golden and almost cooked through but still pliable, 10 to 12 minutes. Let sit until cool enough to handle, 5 to 8 minutes.
    4. Step 4Meanwhile, bring a large pot of salted water to a boil. Fill a large bowl with ice water. Cook the green beans until crisp-tender, about 2 minutes. Immediately transfer the beans to the ice bath. Once cooled, drain well and pat dry. 
    5. Step 5In a medium bowl, toss the beans with the olive oil, garlic powder, 1/2 teaspoon salt, and remaining 1/4 teaspoon black pepper. Divide the green beans into 10 bunches (about 8 to 10 beans each). Wrap a bacon piece around the middle of each bunch and place seam-side down on the prepared rack. 
    6. Step 6Roast the bundles until the green beans are tender and the bacon is crispy and caramelized, 12 to 15 minutes.
