There’s something about a buttery puff pastry tart that just feels a little special, and this pea and goat cheese tart is one of those recipes that looks impressive but comes together with a handful of easy ingredients. It’s especially perfect for spring, when you’re craving something fresh and bright.

The combination of sweet peas and tangy goat cheese is hard to beat. Blending the goat cheese with peas and a touch of honey creates a creamy, flavorful base that pairs beautifully with the flaky, golden puff pastry. A sprinkle of gouda cheese adds richness, while the snow peas on top bring a bit of crunch and color. And don’t skip the balsamic glaze—it adds just the right amount of sweetness to tie everything together.

This easy puff pastry tart works well as a light lunch, brunch dish, or even a simple dinner served with a side salad. It’s also a great option for entertaining, since it can be prepped ahead and assembled quickly. Whether you’re hosting friends or just cooking for your family, this pea and goat cheese tart is a fresh, flavorful recipe you’ll come back to again and again.

Can you use fresh peas instead of frozen peas?

Yes, fresh peas work well in this recipe. Simply blanch them in boiling water for two to three minutes until tender, then cool before using.

Can you make this spring pea and goat cheese puff pastry tart ahead of time?

You can bake the puff pastry and prepare the goat cheese spread a few hours in advance. Assemble the tart shortly before serving for the best texture.

Can you substitute another cheese for goat cheese?

You can use ricotta, cream cheese, or whipped feta as a substitute, though goat cheese provides a distinctive tangy flavor.

Ingredients

  • 2 cups frozen peas (from a 10-oz. package)
  • 1 sheet frozen puff pastry (half of a 17-oz. package), thawed
  • 3/4 cup grated gouda cheese (about 3 oz.)
  • 8 oz. herbed goat cheese
  • 2 tsp. honey
  • 1/2 tsp. kosher salt, plus more to taste
  • 1/4 tsp. black pepper, plus more to taste
  • 1/2 cup snow peas, trimmed and halved crosswise
  • 1/2 tsp. olive oil
  • Balsamic glaze, for topping

Directions

    1. Step 1Preheat the oven to 400ºF. Cook the frozen peas according to the package directions and set aside to cool.
    2. Step 2Roll out the puff pastry on a piece of parchment into a 10-by-12-inch rectangle. Slide the parchment and pastry onto a baking sheet. Using a fork, score a border all the way around the edge of the pastry, about 3/4 inch in. Use the fork to prick the pastry all over the inside border. Sprinkle evenly with the gouda. Bake until puffed and golden brown, 18 to 20 minutes. Let cool for 15 minutes.
    3. Step 3Meanwhile, combine the goat cheese, honey, 1 cup of the cooked peas, salt, and pepper in a food processor and process until smooth and green.
    4. Step 4Spread the goat cheese mixture on the cooled tart. Sprinkle with the remaining 1 cup cooked peas.
    5. Step 5Toss the snow peas with the olive oil and a pinch each of salt and pepper in a medium bowl. Top the tart with the snow peas and drizzle with balsamic glaze just before serving.
