Sheet pan dinners have always been a lifesaver on busy weeknights around here, and this sausage and summer vegetables version is one I make on repeat. You toss everything together, slide the pans into the oven, and let dinner practically cook itself. Even better? Cleanup is very minimal.

This easy sheet pan dinner is loaded with sweet Italian sausage, zucchini, bell peppers, eggplant, red onion, and juicy cherry tomatoes. As everything roasts, the vegetables become caramelized and tender while the sausage browns. A drizzle of balsamic vinegar and fresh basil at the end adds bright, fresh flavor. I love serving it with crusty bread and grainy mustard to soak up all the delicious juices. It’s hearty, colorful, and perfect for an easy family dinner that makes the most of summer produce.

What vegetables work best for sheet pan sausage dinners?

This recipe uses tender summer vegetables like zucchini, eggplant, and peppers that cook at approximately the same rate. But you can easily swap in other vegetables depending on the season and what you have in the fridge. Sweet potatoes, parsnips, and Brussels sprouts all roast well alongside sausage. Just keep in mind that denser vegetables—like new potatoes—will need more time in the oven than quick-cooking ones like asparagus.

What type of sausage works best for sheet pan sausage and vegetables?

This recipe calls for sweet Italian sausage, which adds lots of seasoning and flavor, but it also works well with hot Italian sausage, chicken sausage, turkey sausage, or smoked sausage such as kielbasa or andouille. Fully cooked sausages may roast a little faster than raw sausage links, so keep an eye on them toward the end of cooking.

Can you make sheet pan sausage and vegetables ahead of time?

Yes! You can chop all the vegetables up to a day ahead and store them in the refrigerator until ready to roast. Leftovers also reheat well, making this recipe great for meal prep or easy lunches.

Ingredients

  • 2 red bell peppers, cut into 1-inch pieces
  • 1 medium eggplant, peeled and cut into 3⁄4-inch pieces
  • 1 zucchini, cut into 3⁄4-inch pieces
  • 1 red onion, sliced 1⁄4 inch thick
  • 1/4 cup olive oil
  • 1 Tbsp. Italian seasoning
  • 2 tsp. kosher salt
  • 1 tsp. black pepper
  • 2 lb. sweet Italian sausages (about 8 sausages)
  • 1 (12-ounce) package cherry tomatoes
  • Balsamic vinegar, for drizzling
  • 3 Tbsp. chopped fresh basil
  • Crusty bread and grainy mustard, for serving

Directions

    1. Step 1Place 2 sheet pans in the oven and preheat to 425°F. Combine the bell peppers, eggplant, zucchini and red onion in a large bowl. Drizzle with the olive oil and sprinkle with the Italian seasoning, salt and pepper and toss to coat.
    2. Step 2Carefully divide the vegetables between the 2 hot sheet pans, then arrange the sausage throughout.
    3. Step 3Roast for 15 minutes, then remove the pans from the oven, toss the vegetables and sausage and scatter the cherry tomatoes over the top. Return to the oven and continue roasting until the sausage is cooked through and the vegetables are caramelized and tender, about 15 more minutes.
    4. Step 4Drizzle the vegetables and sausage lightly with balsamic vinegar. Transfer to a platter and sprinkle with the basil. Serve with crusty bread and grainy mustard.
