There’s just something about a jar of homemade pickles sitting in the fridge that makes me feel like I’ve got my life together. These quick pickles are one of those easy little recipes that deliver big flavor with almost no effort—and around our house, they disappear fast!

Crisp English cucumbers and sweet onion slices soak up a tangy, slightly sweet vinegar brine dotted with mustard seeds and just enough red pepper flakes to give things a tiny kick. The best part? No canning equipment, no fancy techniques, and no waiting days and days for flavor. You can whip these up in about 15 minutes, then let the fridge do the rest of the work.

I love piling these quick refrigerator pickles onto juicy smash burgers, serving them with pulled pork sandwiches, or even sneaking a few straight from the jar while standing at the fridge door. They’re crunchy, bright, and downright addictive. How long do quick pickles last in the fridge?

These quick refrigerator pickles will stay fresh for up to two weeks when stored in an airtight container in the refrigerator. In fact, they taste even better after a day or two as the cucumbers soak up the pickling brine, but you can also serve them right away.

Can you make these quick pickles less sweet?

Absolutely. If you prefer a tangier pickle flavor, you can reduce the sugar slightly without affecting the recipe too much. The balance of vinegar, sugar, and salt gives these pickles their classic sweet-and-sour taste.

How soon can you eat quick pickles?

You can enjoy them once they’ve cooled to room temperature, but they become even more flavorful after chilling in the refrigerator for a few hours.

Ingredients

  • 1 lb. English cucumbers, thinly sliced
  • 1/2 small onion, thinly sliced
  • 1 1/2 cups distilled white vinegar
  • 1/2 cup sugar
  • 2 tsp. mustard seeds
  • 1 tsp. kosher salt
  • 1/4 tsp. red pepper flakes

Directions

    1. Step 1Add the cucumbers and onion to a 1-quart jar or other airtight container. Combine the vinegar, sugar, mustard seeds, salt, and red pepper flakes in a small saucepan. Cook over medium heat, stirring occasionally, until beginning to simmer and the sugar has dissolved completely, about 5 minutes.
    2. Step 2Pour the liquid into the jar and stir gently so that there are no air pockets and the spices are distributed. Let sit, uncovered, until the pickles cool to room temperature, then cover and refrigerate until ready to use.
