I've never been shy about my love of all things dill pickle, so turning those tangy, briny flavors into a coleslaw just felt like the next logical step. This dill pickle slaw has everything I love about a classic slaw—cool, crunchy cabbage and plenty of fresh herbs—but with a bold twist that pickle lovers are going to adore.
Instead of a creamy dressing, this slaw is tossed with dill pickle brine, Dijon mustard, olive oil, garlic, and spices to create a bright, tangy vinaigrette that soaks into every bite. Finely chopped dill pickles and fresh dill double down on that irresistible flavor, making this a refreshing side dish that's packed with crunch.
This slaw is perfect for picnics, potlucks, and backyard barbecues because there's no mayonnaise in the dressing. You don't have to worry about it sitting out on the table in the heat, and the flavors actually get even better after a little time in the refrigerator, so you can easily make it ahead.
This easy coleslaw recipe is the perfect match for burgers, pulled pork sandwiches, barbecue chicken, or hot dogs. Whether you're feeding a crowd or just looking for a new way to satisfy your obsession with dill pickle recipes, this crisp, tangy slaw is sure to earn a spot in your regular summer recipe rotation.
Can you make dill pickle slaw ahead of time?
Yes! This is a great make-ahead side dish. You can prepare it up to 12 hours in advance and refrigerate it until you're ready to serve. The cabbage stays crisp while the flavors have time to meld.
How long does dill pickle slaw last?
Store leftover slaw in an airtight container in the refrigerator for up to 3 days. The vegetables will soften slightly over time, but the flavor remains delicious.
Can you use homemade coleslaw mix?
Absolutely. If you prefer, replace the packaged slaw mix with a mixture of about 8 cups total of shredded green cabbage, red cabbage, and carrots for the same crunchy texture.
