Cheesy Stuffed Summer Squash

If your garden (or the farmers' market) has you swimming in summer squash, this cheesy stuffed yellow squash is the answer. Tender roasted squash is filled with a mix of bacon, cheddar, cream cheese, and green onions, then topped with crispy panko for plenty of crunch. Think of it like a loaded baked potato—creamy, cheesy, and packed with bacon—but lighter, fresher, and perfect for summer. It’s just the thing to serve with grilled steak, chicken, or shrimp skewers.

Do you have to cook yellow squash before stuffing it?

Yes. In this recipe, the squash is partially roasted before it’s stuffed, giving it a head start so that it’s perfectly tender by the time the filling is hot and the topping is golden brown. Salting the squash and patting it dry before roasting also helps draw out excess moisture, keeping the creamy filling from becoming watery.

What can you do with extra filling?

If you have any filling left after stuffing the squash, don’t let it go to waste! Store it in an airtight container in the refrigerator for up to 3 days. Use it to stuff more squash, spread it on toast or crackers, serve it as a dip for vegetables, or spoon it into mushroom caps or mini sweet peppers and bake until hot and bubbly. It’s also delicious in sandwiches or wraps!

Can you make cheesy stuffed summer squash ahead of time?

The squash can be roasted and the filling can be prepared up to 1 day ahead. Store the roasted squash and filling in separate airtight containers in the refrigerator, then assemble and bake just before serving. For the crispiest topping, wait to add the panko mixture until just before baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a 350-degree Fahrenheit oven until warmed through and the topping is crisp again, 10 to 15 minutes.

Ingredients

  • 4 medium summer squash (2 1/2 to 3 lb. total)
  • 1 1/4 tsp. kosher salt
  • 2 Tbsp. olive oil
  • 6 bacon slices
  • 6 oz. cream cheese, at room temperature
  • 1/4 cup sour cream
  • 1/2 tsp. garlic powder
  • 1/4 tsp. black pepper
  • 1 cup shredded cheddar cheese (about 4 oz.)
  • 3 green onions, sliced
  • 1/2 cup panko breadcrumbs

Directions

    1. Step 1Preheat the oven to 400°F. Line a baking sheet with parchment paper.
    2. Step 2Halve the squash lengthwise. Use a spoon to scoop out and discard the interior of the squash, leaving about a 1/4-inch-thick border around the edges. Arrange the squash boats on the prepared baking sheet. Sprinkle the insides of the boats with 1 teaspoon salt and let sit for at least 10 minutes to draw out the moisture.
    3. Step 3Pat the inside of the squash dry and drizzle with 1 tablespoon of the olive oil. Turn the squash cut-side down and roast until the squash releases some moisture and a paring knife can go in with a little resistance, 8 to 10 minutes.
    4. Step 4Meanwhile, cook the bacon in a large skillet over medium heat, flipping occasionally, until crisp, 5 to 7 minutes. Remove to a paper towel–lined plate; chop when cool enough to handle.
    5. Step 5In a large bowl, mix the cream cheese and sour cream with an electric mixer or sturdy spatula until smooth. Stir in the garlic powder, pepper, and the remaining ¼ teaspoon salt. Fold in ¾ cup of the cheddar cheese, 2 of the green onions, and the bacon.
    6. Step 6Turn the squash cut-side up and divide the filling evenly among the squash. Sprinkle with the remaining ¼ cup cheddar cheese. In a small bowl, toss the panko with the remaining 1 tablespoon olive oil and sprinkle over the squash boats.
    7. Step 7Bake until the breadcrumbs are golden brown and the cheese is melted, 15 to 20 minutes. Serve sprinkled with the remaining green onions.
