Sheet Pan Broccoli Cheddar Quesadillas

Gone are the days of standing at the stove cooking quesadillas one by one! These sheet pan quesadillas are stuffed with broccoli and plenty of melty cheddar, then baked in the oven all at one time. They’re perfect for lunch, an easy dinner, or an after-school snack—and they may just be the most delicious way to get your kids to eat more veggies.
The secret is to toss the broccoli in a little adobo sauce before roasting it. This way, it gets slightly crisp and develops tons of flavor before it ever hits a tortilla. Mix a little more adobo sauce with sour cream for a yummy dipping sauce. Quesadilla recipes are always favorites around here!

Can you use frozen broccoli?
Yes! You can use 1 pound of frozen broccoli florets. Just be sure to thaw them completely, drain them well, and pat them thoroughly dry first. They may need a few extra minutes in the oven to brown. Spread the broccoli in a single layer on the baking sheet so it roasts rather than steams—excess moisture can make the quesadillas soggy.
How do you store and reheat leftover quesadillas?
Let the quesadillas cool completely, then store them in an airtight container in the refrigerator for up to 3 days. Reheat them on a baking sheet in a 375-degree Fahrenheit oven for 8 to 10 minutes, flipping halfway through, until the cheese is melted and the tortillas are crisp. You can also reheat individual quesadillas in an air fryer at 350 degrees Fahrenheit for 3 to 5 minutes. Avoid the microwave, which can make the tortillas soggy. Store the chipotle sour cream in a separate airtight container in the fridge.

Ingredients
- Cooking spray, for the baking sheet
- 1/4 cup vegetable oil
- 3 Tbsp. plus 2 tsp. adobo sauce (from a can of chipotles)
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 1 lb. broccoli florets (or 1 large bunch), roughly chopped
- 1 cup sour cream
- 12 (6- or 7-inch) flour tortillas
- 1 lb. sharp cheddar cheese, grated (about 4 cups)
- 3 Tbsp. salted butter, at room temperature
Directions
- Step 1Position racks in the upper and lower thirds of the oven and preheat to 425˚F. Line a baking sheet with foil and spray with cooking spray. Combine the vegetable oil, 3 tablespoons of the adobo sauce, the salt, and pepper in a large bowl. Add the broccoli and toss to coat. Spread in an even layer on the baking sheet and bake on the lower rack, flipping halfway through, until tender and starting to brown, about 15 minutes. Remove the broccoli and foil from the baking sheet.
- Step 2Meanwhile, mix the sour cream with the remaining 2 teaspoons adobo sauce in a small bowl and set aside.
- Step 3Lay out 6 tortillas. Sprinkle with half the cheddar, then top with the broccoli and remaining cheddar. Top each with another tortilla and press down to compact the layers.
- Step 4Put 1 tablespoon of butter on each of 2 baking sheets and put them in the oven. Butter the tops of the quesadillas with the remaining tablespoon of butter. (By now the butter on the baking sheets should be melted and even browning a bit as the baking sheets heat.) Put 3 quesadillas buttered-side up on each baking sheet.
- Step 5Bake until the quesadillas are golden brown on the bottom, about 4 minutes. Flip and cook until golden brown on the other side, 2 to 3 more minutes; switch the baking sheets if the quesadillas on the lower oven rack are browning faster. Cut into wedges and serve with the chipotle sour cream.
