Mushroom gravy is for everyone no matter if you're a vegetarian, meat eater, or just a serious mushroom fan. The creamy, flavorful gravy instantly elevates dishes of all kinds, and you don't need any meat drippings to make it! Spoon some over your Thanksgiving turkey and stuffing, meatloaf, roast beef, or just a big pile of creamy mashed potatoes. This savory, saucy mushroom recipe is an easy way to take your dinner to the next level—no matter what you ladle it on. So get creative!

How do you make gravy taste good?

Mushrooms naturally have a woody, umami flavor that, by itself, makes this gravy taste wonderful. However, almost any gravy can benefit from aromatics. This recipe uses fragrant garlic, onion, and thyme to elevate the taste.

What type of mushrooms do you use for mushroom gravy?

What's in mushroom gravy?

Cooked mushrooms have a satisfyingly meaty flavor and this recipe starts with lots of them—one pound to be exact. Heat a skillet very hot then sear the mushrooms in olive oil. Place them in a single layer and do not stir for the first few minutes of cooking. This allows the mushrooms to caramelize and gives the gravy deep flavor and color. Add onion, garlic, fresh thyme leaves, and a splash of soy sauce to enhance all the savory notes. Vegetable stock keeps this gravy vegetarian, but beef or chicken stock can be substituted if you are serving this with ribeye steaks or chicken fried chicken.

How do you thicken mushroom gravy?

Butter and all-purpose flour make a roux that thickens this mushroom gravy. Once the mushrooms, onions and garlic are cooked, melt more butter in the skillet, then sprinkle flour evenly over top. Stir and cook for about one minute to toast the flour and remove its raw taste, before stirring in the stock.

What do you serve with mushroom gravy?

Substitute mushroom gravy for country gravy with chicken fried steak. Main dishes like chicken breast or thighs are punched up flavor wise, with a ladle full. Buttered noodles and of course, mashed potatoes, are also perfect companions. Serve it at your Thanksgiving dinner table alongside dressing!

Can you make mushroom gravy ahead of time?

Yes! Mushroom gravy will stay good for up to three days in an airtight container in the refrigerator. Reheat the gravy over low heat on the stove, stirring often, until warmed through. If the gravy looks like it has separated, just keep stirring until it comes back together.

Can you freeze mushroom gravy?

Yes! This gravy freezes well. Once it has cooled completely, place the gravy in an airtight container and freeze for up to three months. Let the gravy thaw in the refrigerator overnight, then reheat over low heat on the stove.

Ingredients

  • 3 Tbsp. olive oil
  • 1 lb. sliced mushrooms (white button or baby bella)
  • 1/4 cup finely chopped red onion or shallot
  • 1 clove garlic, finely chopped
  • 1/4 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1 tsp. chopped thyme leaves
  • 2 Tbsp. salted butter
  • 1/4 cup flour
  • 3 cups vegetable stock
  • 1 Tbsp. soy sauce
  • 1 Tbsp. chopped parsley

Directions

    1. Step 1Heat a large skillet over medium-high heat. Add the olive oil, then the mushrooms. Spread them in an even layer and let cook, undisturbed, for 4 minutes. Add the onion, garlic, salt, pepper, and thyme, and stir to combine. Cook 2 minutes more. 
    2. Step 2Reduce the heat to medium. Add the butter to the skillet. Once melted, sprinkle the flour evenly over top of the mushrooms. Stir until the flour mixture is lightly toasted, about 1 minute.
    3. Step 3Add the vegetable stock and soy sauce. Scrape the bottom of the skillet to remove all the brown bits and stir until smooth. Increase the heat to medium-high to return to a simmer, then reduce heat to medium and let the gravy simmer for 5 minutes. 
    4. Step 4Remove from the heat and stir in the parsley. 

Tip: If you like a creamy gravy, stir in 2 tablespoons of heavy cream with the parsley.
