Feeding cowboys in the summer is not for the faint of heart! They’re up early, they’ve usually already done several hours of work before most people have located their coffee, and somehow they still manage to appear within smelling distance of sausage, eggs, and melted cheese. It’s one of the more reliable laws of ranch life. 😂
Ree Drummond knows this better than anyone, which is probably why her latest breakfast idea is so darn smart! She shared a few peeks on Instagram of her latest early morning creation and the review was short but very convincing: “Homemade English muffin breakfast sandwiches are absolutely top-tier.”
The sandwiches appeared to be made with English muffins, eggs, cheese, and sausage patties, then wrapped up in foil for easy serving. In other words, they’re exactly the sort of breakfast that makes sense when there are hungry people coming in from gathering cattle, or hungry teenagers coming down the stairs, or hungry husbands wandering into the kitchen with no stated purpose other than seeing what might be available.
Paige helped assemble the sandwiches after gathering cattle that morning, which is a very Drummond sequence of events. Gather cattle, come inside, help with breakfast. Check! Somewhere in the middle of all of this, Lucy got to enjoy the extras, because no proper ranch breakfast operation would be complete without a dog standing close by and hoping things go her way.
Ree summed up the whole scene best: “Feeding cowboys. It’s not just a job, it’s an adventure.”
The good news is that this breakfast works even if there isn’t a single cowboy within 50 miles of your kitchen. English muffin sandwiches are easy to prep ahead, wrap individually, and keep in the fridge or freezer for busy summer mornings. Just reheat one before camp drop-off, swim lessons, work, a road trip, or whatever else the day has planned for you before 9 a.m. Cattle gathering is optional, but the warm, cheesy breakfast sandwich part is highly recommended!
