If there’s one dish that always has a place on my table, it’s this broccoli rice casserole—a longtime Drummond family favorite that tastes like pure comfort in every bite (plus kids love it)! Creamy, cheesy, and loaded with tender broccoli and fluffy rice, this dish has been perfected over the years.

I usually make it for Thanksgiving, but really, it's delicious any time of year with something like a roast chicken, pork chops, or a big glazed Easter ham. It’s even hearty enough to shine as a vegetarian main dish thanks to the rich cheese sauce made with cream cheese, parmesan, and good ol’ Velveeta (I can't help myself, it just works!). The cayenne and paprika give it a touch of warmth, while the pimentos add color and a little zing. This is one of those broccoli recipes that even broccoli skeptics will happily dig into!

Can you use frozen broccoli instead of fresh?

This casserole works best with fresh broccoli florets because they hold their shape and maintain their texture. Frozen broccoli tends to release extra water as it bakes, which can make the casserole a little soggy instead of creamy and cheesy.

Absolutely! This recipe skips canned cream soup and uses a simple homemade cheese sauce made from butter, flour, milk, and cheese. It’s fresher, more flavorful, and lets you control the salt and texture.

Ingredients

  • 4 Tbsp. (1/2 stick) salted butter
  • 1 medium yellow onion, finely diced
  • 1 garlic clove, grated
  • 4 Tbsp. all-purpose flour
  • 1/2 tsp. dry mustard
  • 1/4 tsp. cayenne pepper
  • 3 cups whole milk
  • 4 oz. cream cheese, at room temperature
  • 1/2 cup grated parmesan cheese
  • 1 tsp. black pepper
  • 1/2 tsp. kosher salt
  • 1/2 tsp. paprika
  • 8 oz. processed cheese (Velveeta), cubed
  • 3 cups grated sharp cheddar cheese (about 12 ounces)
  • 8 cups small broccoli florets
  • 6 oz. diced pimentos, drained
  • 2 1/2 cups cooked long-grain rice

Directions

    1. Step 1Preheat the oven to 350˚F degrees. In a large skillet, melt the butter over medium heat. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes. Sprinkle over the flour, dry mustard, and cayenne and stir to mix it in well. Continue to cook for 1 minute.
    2. Step 2Next, add the milk, stirring constantly, and cook until thickened, about 2 minutes. Add the cream cheese and parmesan, stirring until totally combined. Stir in the pepper, salt, and paprika. 
    3. Step 3Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the cheddar and stir until melted. Then, fold in the broccoli and pimentos.
    4. Step 4In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the remaining 1 ½ cups cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.
