It’s potato salad season! Really, I’d eat different potato salad recipes every day of the year if I could, but during the summer, there’s no better side. This one is a little different from my go-to perfect potato salad, but it is delicious in its own wonderful way.
For starters, it’s served warm, which is traditional for German potato salads. And that’s a very good thing because it can go straight from the skillet to the table—no waiting around for it to chill in the fridge. It’s also completely mayo-free, so if mayonnaise has kept you from loving other potato salads, I’d encourage you to give this one a try. It’s tossed in a zippy mustardy vinaigrette, along with a handful of herbs and plenty of crispy bacon, so it’s bright, tangy, and flavorful. Bring it to your next cookout!

Ingredients
- 3 lb. small red potatoes
- 1 Tbsp. plus 2 tsp. kosher salt
- 8 oz. bacon, chopped
- 1 yellow onion, chopped
- 1/2 cup apple cider vinegar
- 2 Tbsp. whole-grain mustard
- 1 Tbsp. sugar
- 1/2 tsp. black pepper
- 1/2 cup fresh parsley, chopped
- 2 Tbsp. chopped fresh chives
Directions
- Step 1Place the potatoes in a large pot and cover with water by 1 inch. Season with 1 tablespoon of the salt. Bring to a simmer and cook until the potatoes can be easily pierced with a paring knife, 15 to 18 minutes. Drain. When cool enough to handle, slice the potatoes into ¼-inch-thick rounds. Return the potatoes to the pot and cover to keep warm.
- Step 2In a large skillet, cook the bacon over medium heat, stirring occasionally, until crisp, 5 to 7 minutes. Transfer to a paper towel–lined plate.
- Step 3Add the onion and 1 teaspoon salt to the drippings in the skillet and cook over medium heat, stirring frequently, until lightly browned, about 5 minutes. Reduce the heat to low and add the vinegar, mustard, sugar, and pepper. Bring to a simmer and remove from the heat.
- Step 4Fold in the potatoes, bacon, and the remaining 1 teaspoon salt, making sure the potatoes are well coated. Gently fold in the parsley and chives. Serve warm, at room temperature, or chilled.
