It’s potato salad season! Really, I’d eat different potato salad recipes every day of the year if I could, but during the summer, there’s no better side. This one is a little different from my go-to perfect potato salad, but it is delicious in its own wonderful way.

For starters, it’s served warm, which is traditional for German potato salads. And that’s a very good thing because it can go straight from the skillet to the table—no waiting around for it to chill in the fridge. It’s also completely mayo-free, so if mayonnaise has kept you from loving other potato salads, I’d encourage you to give this one a try. It’s tossed in a zippy mustardy vinaigrette, along with a handful of herbs and plenty of crispy bacon, so it’s bright, tangy, and flavorful. Bring it to your next cookout!

Can you make warm German potato salad ahead of time?

Yes, you can prepare the potato salad up to one day in advance and store it in an airtight container in the refrigerator. For the best flavor and texture, let it come to room temperature or gently rewarm it in a skillet over low heat or in the microwave before serving, though it’s also delicious served chilled. If you’re making it ahead, reserve a small portion of the herbs to stir in just before serving for a fresh finish.

What potatoes work best for warm German potato salad?

Stick with small red potatoes for this salad. They’re waxy, so they hold their shape well and won’t fall apart when you slice them and toss them with the dressing. Here’s a quick rundown on the different types of potatoes and their best uses.

How long does leftover warm German potato salad last in the fridge?

Leftover potato salad can be stored in an airtight container in the refrigerator for up to three days. The potatoes will continue to absorb the dressing over time, so you may want to add a small splash of vinegar or a drizzle of olive oil before serving.

Ingredients

  • 3 lb. small red potatoes
  • 1 Tbsp. plus 2 tsp. kosher salt
  • 8 oz. bacon, chopped
  • 1 yellow onion, chopped
  • 1/2 cup apple cider vinegar
  • 2 Tbsp. whole-grain mustard
  • 1 Tbsp. sugar
  • 1/2 tsp. black pepper
  • 1/2 cup fresh parsley, chopped
  • 2 Tbsp. chopped fresh chives

Directions

    1. Step 1Place the potatoes in a large pot and cover with water by 1 inch. Season with 1 tablespoon of the salt. Bring to a simmer and cook until the potatoes can be easily pierced with a paring knife, 15 to 18 minutes. Drain. When cool enough to handle, slice the potatoes into ¼-inch-thick rounds. Return the potatoes to the pot and cover to keep warm.
    2. Step 2In a large skillet, cook the bacon over medium heat, stirring occasionally, until crisp, 5 to 7 minutes. Transfer to a paper towel–lined plate.
    3. Step 3Add the onion and 1 teaspoon salt to the drippings in the skillet and cook over medium heat, stirring frequently, until lightly browned, about 5 minutes. Reduce the heat to low and add the vinegar, mustard, sugar, and pepper. Bring to a simmer and remove from the heat.
    4. Step 4Fold in the potatoes, bacon, and the remaining 1 teaspoon salt, making sure the potatoes are well coated. Gently fold in the parsley and chives. Serve warm, at room temperature, or chilled.
