I can be a little picky about my potato salad because so many versions out there fall short in terms of flavor and texture. But not this one, man. No way, no how. This grilled potato salad has so much going on: tender, lightly charred baby potatoes, crispy crumbled bacon, hunks of grilled onion and sweet bell pepper, and a cool, creamy dressing—similar to ranch—packed with fresh herbs. Put this on your list of potato salad recipes and BBQ side dishes to try before summer ends. It goes great with everything from burgers to ribs to this juicy grilled flank steak!
Do you have to boil the potatoes before grilling them?
Yes, you really do. Boiling the potatoes first gives them a head start so they get nice and tender on the inside. If you toss them straight onto the grill raw, they’ll burn before they’re cooked through.
Can you make grilled potato salad ahead of time?
Absolutely. You can boil the potatoes and cook the bacon up to 1 day ahead and store them in separate airtight containers in the refrigerator. The dressing can also be made up to 2 days ahead and kept chilled; just give it a good shake or stir before using. For the best texture, grill the potatoes and assemble the salad closer to serving time, though you can assemble it a few hours ahead and refrigerate it if needed.
How long does leftover grilled potato salad last in the fridge?
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. As the salad sits, the potatoes will absorb more of the dressing, so it helps to reserve a little extra to stir in before serving. Serve it chilled or, for the best flavor, let it sit at room temperature for 15 to 20 minutes before serving.

Ingredients
- 3 lb. baby Yukon gold potatoes, halved
- 1 Tbsp. plus 1 tsp. kosher salt
- 8 slices bacon
- Vegetable oil, for the grill
- 2 Tbsp. olive oil
- 1 Tbsp. rosemary, minced
- 3 garlic cloves, minced
- 1 yellow onion, sliced into rounds
- 1 red bell pepper, quartered
- 3/4 tsp. black pepper
- 2/3 cup mayonnaise
- 1/3 cup sour cream
- 2 Tbsp. buttermilk
- 2 Tbsp. fresh parsley, chopped, plus more for garnish
- 1 Tbsp. fresh dill, chopped, plus more for garnish
- 2 tsp. chopped chives, plus more for garnish
- 2 to 3 dashes Worcestershire sauce
- Dash of white vinegar
- Dash of hot sauce
Directions
- Step 1Add the potatoes and 1 tablespoon salt to a large pot and cover with water. Bring to a boil over medium-high heat and cook until tender, 8 to 10 minutes. Drain and set aside to cool, 5 to 7 minutes.
- Step 2Meanwhile, cook the bacon in a large skillet over medium heat, turning occasionally, until crispy, 5 to 7 minutes. Remove to a paper towel–lined plate. Let cool, then roughly chop.
- Step 3Preheat a grill or grill pan to medium-high and oil the grates. In a large bowl, toss the cooled potatoes with the olive oil, rosemary, garlic, onion, red bell pepper, ½ teaspoon pepper, and ½ teaspoon salt. Grill the potatoes and vegetables until nicely browned, 2 to 3 minutes per side. Transfer the potatoes to a clean large bowl. Transfer the peppers and onions to a cutting board, cut into bite-size pieces, then add to the potatoes.
- Step 4Make the dressing by adding the mayonnaise, sour cream, buttermilk, parsley, dill, chives, Worcestershire sauce, vinegar, hot sauce, and the remaining ½ teaspoon salt and ¼ teaspoon pepper to a mason jar. Secure the lid and shake until well combined.
- Step 5Pour about three-quarters of the dressing over the potatoes and toss to coat. Fold in the chopped bacon and sprinkle over more parsley, dill, and chives. Add more dressing if desired.
