Rotisserie chicken and store-bought pesto make these tiny sandwiches effortless to pull together for your next brunch, but elegant enough to fool your guests into thinking they were a lot of work!

Ingredients

  • 2 cups shredded rotisserie chicken (from about 1/2 chicken)
  • 1/2 cup dried currants
  • 1/2 cup prepared pesto
  • 1/3 cup plain Greek yogurt
  • 1/2 cup finely chopped celery
  • 1/4 tsp. kosher salt
  • 12 mini croissants, split open
  • Baby arugula, for topping

Directions

    1. Step 1Combine the shredded chicken, currants, pesto, yogurt, celery, and salt in a medium bowl and stir until the chicken is well coated.
    2. Step 2Fill the croissants with the chicken salad and top with arugula.
