Cheesy Zucchini Casserole

When summer is in full swing, there’s no shortage of zucchini—and that's just the way we like it! One of the best ways to enjoy the summer squash is to transform it into a cheesy zucchini casserole. Filled with layers of garden-fresh zucchini, a deliciously creamy cheese sauce, and a crunchy panko topping, this casserole has just the right amount of decadence without being too heavy for a summer meal. Serve it as a side dish alongside your favorite grilled steak, or make it the main event for a vegetarian weeknight dinner. Pro tip: freeze your summer zucchini so you can make this casserole all year long!

How do you keep squash casserole from getting watery?

Zucchini has a tendency to release a lot of water when cooked, so it’s important to follow a couple of steps before putting the casserole together. First, you’ll need to salt, roast, and then drain the zucchini. This ensures that you've removed a lot of excess water. Next, you'll want to add ingredients to bind things together. For this recipe, eggs, cream, and cheese give this casserole it's thickness (and richness!).

How do you cook zucchini and squash without it getting mushy?

Many recipes will suggest sautéing the zucchini before making the casserole. This requires a lot of stirring which can break down the squash and make it even more mushy. Instead, we roast the zucchini to help release and dry out any extra liquid. Once it's spread out on a sheet tray and in the oven, there is no need to stir—it keeps its shape without becoming mushy.

Does zucchini casserole freeze well?

This zucchini casserole can be stored in the refrigerator for up to 4 days after baking, but we wouldn’t recommend freezing it. Even though you cook out a lot of water, the zucchini is still very watery and can become soggy when thawed.

Ingredients

  • 2 1/2 lb. zucchini, sliced into 1/4-inch thick rounds
  • 1 red bell pepper, seeded and diced
  • 1/2 yellow onion, chopped
  • 3 Tbsp. olive oil
  • 1 1/4 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 3/4 cup heavy cream
  • 2 large eggs
  • 8 oz. sharp cheddar cheese
  • 3 cloves garlic, chopped
  • 1/2 cup grated parmesan
  • 1/3 cup chopped fresh parsley
  • 1 1/2 cups panko or breadcrumbs
  • 1/4 cup butter, melted, plus more for the pan

Directions

    1. Step 1Preheat the oven to 400˚. On a large sheet tray, combine the zucchini, bell pepper and onion. Drizzle with the olive oil and sprinkle with the salt and black pepper. Toss gently to combine. Cook for 30 minutes, until the zucchini is slightly softened and has released its liquid. Drain the mixture through a colander. Once cool enough to touch, press gently with paper towels to press out and soak up any extra moisture. 
    2. Step 2In a large bowl, whisk together the heavy cream and eggs. Mix in the cheddar cheese, garlic, ¼ cup of the parmesan cheese and all but 2 tablespoons of parsley (reserve this for later). Gently mix in the drained zucchini mixture. Transfer to a buttered 9- by- 13-inch, or three-quart, casserole dish.
    3. Step 3Reduce the oven temperature to 350˚. In a small bowl, combine the panko and melted butter. Mix in the remaining ¼ cup of grated parmesan cheese and 2 tablespoons of parsley. Sprinkle all over the top of the casserole. Bake for 35-40 minutes, until the top is lightly golden brown, the edges are bubbly and the center is set. (If the topping is browning to quickly, cover loosely with a piece of foil.) Let rest for 10 minutes, then serve.

This recipe also works well for yellow squash.
