This is such a fresh, delicious salad to make when strawberries are in season! Between the sweet, juicy berries, the peppery arugula, the fresh mint, the salty feta, the toasted pecans, and the tangy vinaigrette, it's a wonderful combination of texture and flavor—and exactly the thing I crave this time of year when I can’t seem to get enough strawberry recipes!

This salad can be paired with just about anything, but it’s also great as a main dish with grilled chicken or grilled shrimp tossed on top. Here are some great grilled chicken recipes and grilled shrimp skewers that’d be perfect!

Can you substitute spinach for arugula in strawberry salad?

Absolutely. If you like spinach better, feel free to swap it in for the arugula. The salad will be a little milder and less peppery, but it will still be fresh and delicious.

Can you make strawberry arugula salad ahead of time?

You can prep a few components ahead, but wait until just before serving to assemble the salad so everything stays fresh. The pecans can be toasted up to three days ahead and stored in an airtight container at room temperature. The dressing can be made up to two days ahead and refrigerated in an airtight container. The shallot and strawberries can be sliced one day ahead and stored in separate airtight containers in the refrigerator.

Ingredients

  • 1 cup roughly chopped pecans
  • 2 Tbsp. rice vinegar
  • 2 tsp. honey
  • 1 tsp. Dijon mustard
  • 1/2 tsp. kosher salt, plus more to taste
  • Black pepper, to taste
  • 1/4 cup olive oil
  • 1 small shallot, thinly sliced
  • 1 lb. strawberries, hulled and quartered
  • 1 (5-ounce) package baby arugula
  • 1/2 cup crumbled feta cheese
  • 1/2 cup fresh mint leaves, torn

Directions

    1. Step 1Preheat the oven to 350°F. Spread the pecans on a baking sheet and toast in the oven until they darken a shade or two and smell nutty, 5 to 6 minutes. Let cool completely.
    2. Step 2For the dressing: Whisk together the vinegar, honey, mustard, salt, and a few grinds of pepper in a large salad bowl. Whisk in the olive oil until smooth. Add the shallot and strawberries and toss to coat with the dressing.
    3. Step 3Add the arugula, feta, mint, and pecans and toss to coat everything with the dressing. Season with salt and pepper.
