Choosing between classic creamy mashed potatoes and a fully loaded mashed potato casserole is no small decision. One is simple and comforting; the other is bold, indulgent, and completely unapologetic. I fully understand that there is a time and place for the former. But sometimes, more is just—well—more. That’s when I turn to an over-the-top potato dish like this casserole. It’s got smoky bacon, two kinds of cheese, crispy fried onions, and potato chips. Yes, potato chips. This mashed potato casserole is ridiculous in the best way possible.

And once you see what goes into it, you'll understand exactly why this casserole is so hard to resist. The cooked potatoes are mashed, then combined with things like creamy onion dip, crispy bacon, cheese, and fried onions. Everything goes into a casserole dish and is topped with more cheese, more fried onions, and kettle-cooked potato chips. Oh my heavens, is it wonderful. This dish goes well with Thanksgiving turkey, Christmas ham, or just a good steak dinner!

What kind of potatoes are best for mashed potatoes?

There are a few different types of potatoes you can use for mashed potatoes, but my favorites are russets and Yukon Golds. Both are high in starch and mash up nicely. For this recipe, I use russet potatoes because they tend to be a little lighter and fluffier when mashed. Yukon Golds would work great too, so use what you like best!

Can you make mashed potato casserole ahead of time?

You sure can! This potato side dish can be made up to two days ahead of time, covered with foil, and refrigerated (unbaked). Wait to mix up the topping and add it just before you pop the casserole in the oven so the onions and chips stay crunchy.

Can you freeze mashed potato casserole?

Yes. While many potato dishes don’t freeze and thaw well, the butter and cream in this recipe help the potatoes keep their creamy texture. Tightly wrap the unbaked mashed potato casserole (without the toppings) in plastic wrap, then freeze it for up to two weeks. Thaw it in the fridge overnight, add the topping, and bake as directed.

Can mashed potato casserole be vegetarian?

Absolutely! Just skip the crumbled bacon, and it’s a great vegetarian side dish.

Ingredients

Casserole

  • 1/2 cup (1 stick) salted butter, melted, plus more for the baking dish
  • 1 (16-oz.) container sour cream
  • 1 (1-oz.) envelope onion soup mix
  • 4 lb. russet potatoes, peeled and cut into large chunks
  • 1 cup heavy cream, warmed
  • 1 lb. bacon, cooked and crumbled
  • 8 oz. monterey jack cheese, shredded (about 2 c.)
  • 1/2 cup lightly crushed crispy fried onions
  • 1 1/2 tsp. kosher salt
  • Black pepper, to taste

Topping

  • 1 cup lightly crushed crispy fried onions
  • 1 cup lightly crushed kettle cooked potato chips with sea salt
  • 1/4 cup grated parmesan cheese (about 1 oz.)
  • Chopped chives or green onions, for serving

Directions

    1. Step 1For the casserole: Preheat the oven to 375°F. Generously butter a 13-by-9-inch baking dish. 
    2. Step 2In a small bowl, stir together the sour cream and onion soup mix. Refrigerate while you prepare the potatoes so the flavors have time to meld.
    3. Step 3Place the potatoes into a large pot and cover them with cold water by 1 inch. Bring the water to a boil over high heat and cook until the potatoes are fork tender, 20 to 25 minutes.  
    4. Step 4Drain the potatoes well and return them to the same pot. Place the pot back on the same burner (heat turned off) and mash until there are no visible lumps.
    5. Step 5Add the prepared onion dip, melted butter, heavy cream, bacon, monterey jack cheese, fried onions, and salt, and stir to combine. Season to taste with pepper. Transfer the mashed potatoes to the prepared baking dish, spreading them evenly.  
    6. Step 6For the topping: In a small bowl, stir together the fried onions, potato chips, and parmesan. Sprinkle the mixture evenly over the top of the mashed potatoes. Bake until bubbling and browned on top, 15 to 20 minutes. Sprinkle with chives just before serving.
