- 3/4 tsp. kosher salt, plus more to taste
- A few dashes of hot sauce (optional)
- Vegetable oil, for frying
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- 1/4 cup grated parmesan cheese (about 2 oz.)
- Paprika, for sprinkling
- Chopped chives, for sprinkling
Directions
- Step 1Peel the hard-boiled eggs and cut them in half lengthwise. Remove the yolks to a medium bowl and mash with a fork until they're broken up. Add the mayonnaise, mustard, pickle juice, pepper, 1/4 teaspoon of the salt, and a few drops of hot sauce, if using, and stir until mostly smooth.
