If you need a hearty, crowd-pleasing snack in a hurry, this Rotel dip is about to become your new best friend. I’m talking 20 minutes from start to finish, people. It’s the kind of warm, melty dip that disappears fast at graduation parties, tailgates, the Super Bowl, or really any get-together where hungry people are hovering near the snack table.

At its heart, Rotel dip is gloriously simple: melty processed cheese, canned diced tomatoes and green chiles, and seasoned ground beef all cozying up together in one skillet. It’s similar to queso, but a little heartier. A bit of onion and chipotle chile powder add just enough flavor and gentle heat to keep things interesting without scaring anyone off.

This is absolutely game-day food, but it’s also an anytime recipe you’ll find yourself making again and again, even after football season is over. Keep it warm in a slow cooker, give it a stir now and then, and don’t forget the tortilla chips—because trust me, people are going to go back for seconds.

Do you have to drain the diced tomatoes and green chiles?

Nope! Just dump everything in, juice and all. The extra liquid helps thin out the dip a little so it's smooth, melty, and extremely dippable.

What can you substitute for the ground beef in Rotel dip?

You can use a pound of ground sausage (spicy, if you like heat, sweet, or even breakfast sausage if you like the flavor). Brown it as directed, just like the beef, and drain off any excess fat before adding it to the cheese. You can also leave the meat out altogether.

How do you keep Rotel dip warm for a party?

The easiest way to keep Rotel dip warm is in a slow cooker set to “warm” or “low.” Give it a stir every so often to prevent sticking, and it will stay perfectly melty for hours.

Is Rotel dip spicy?

Rotel dip has a mild-to-medium heat level, depending on the type of Rotel used and how much chipotle chile powder you add. The chipotle powder adds more smoky flavor than intense heat, making it flavorful without being overpowering. You can leave it out if you want!

What can you serve with Rotel dip?

Rotel dip is great served with tortilla chips, but it’s also delicious with Fritos, pretzels, or sliced bell peppers. You can even spoon it over baked potatoes, fries, or hot dogs for a fun topping.

Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 yellow onion, diced
  • 1 (2-pound) block processed cheese (such as Velveeta), cubed
  • 2 (10-ounce) cans diced tomatoes and green chiles (such as Rotel)
  • 1/2 tsp. chipotle chile powder
  • Chopped fresh cilantro, for serving (optional)

Directions

    1. Step 1In a large nonstick skillet, heat the oil over medium heat. Add the beef and onion and cook, breaking up the beef with a wooden spoon, until browned and cooked through, 6 to 8 minutes. Once browned, drain off any excess fat.
    2. Step 2Reduce the heat to low and add the processed cheese, tomatoes and green chiles, and chile powder. Cook, stirring constantly, until the cheese melts and the dip is smooth and combined, 2 to 3 minutes. Sprinkle with cilantro, if you like. Serve with tortilla chips. 

Tip: Rotel dip can be made ahead of time and held in the slow cooker on warm for up to two hours.
