Sour Cream and Onion Deviled Eggs

I don’t know about you, but I’ve never met a potato chip I didn’t absolutely love. So the idea of pairing salty, savory sour cream and onion chip shards with creamy, dreamy deviled eggs sounded like a match made in snack heaven! These little bites of joy are the newest addition to my ever-growing deviled egg collection, sitting pretty right next to classics like dill pickle deviled eggs and herbed deviled eggs. They truly shine as a go-to appetizer for spring gatherings. Oh, and there are so many creative ways to decorate deviled eggs—here are twelve fun ideas to get you inspired. Happy egg-making!

Ingredients

  • 12 large eggs
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tsp. yellow mustard
  • 1 tsp. distilled white vinegar
  • 1 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. chopped fresh chives, plus more for garnish
  • Paprika, for sprinkling
  • Sour cream and onion potato chips, broken, for garnish

Directions

    1. Step 1Bring a large pot of water to a boil. Fill a large bowl with ice water. Using a slotted spoon, gently lower the eggs into the boiling water. Reduce the heat, cover and simmer for 10 minutes. Remove the eggs with the slotted spoon to the bowl of ice water; let cool completely, about 10 minutes.
    2. Step 2Peel the eggs, cut in half lengthwise, and scoop out the yolks into a large bowl. Add the mayonnaise, sour cream, mustard, vinegar, onion powder, garlic powder, salt, and pepper, and mash with a fork until smooth. Fold in the chives.
    3. Step 3Scoop the filling into a zip-top bag and snip a corner. Pipe the filling into the egg whites. Sprinkle with paprika and garnish with chives and potato chips.
