If you're looking for an easy peach dessert to use up all that juicy summer fruit, pop open a can of cinnamon rolls and get ready for something magical. This shortcut cinnamon roll peach cobbler layers warm, bubbling peaches under golden, fluffy cinnamon rolls for a dish that's part breakfast, part dessert, and completely irresistible.

The recipe starts with sliced peaches simmered with sugar, lemon, and warm spices until thick and syrupy. Instead of mixing up a traditional biscuit topping, you slice up canned cinnamon rolls and drape them right over the fruit. As it bakes, the rolls puff and become brown and crisp on top, while soaking up all those peachy juices on the bottom. Once it's cooled slightly, drizzle on the icing and grab a spoon. It is sweet, gooey, and wildly good any time of day, whether you serve it with coffee for brunch or a scoop of ice cream for dessert. Is there anything easier than a cobbler recipe?

Can you use frozen peaches for cinnamon roll peach cobbler?

While this might be a dream summer dessert, you can absolutely use frozen peaches with stellar results. Just add about 1/2 cup more fruit if you're using frozen peaches so the baking pan is full.

Do you have to slice the cinnamon rolls in half?

Yes, it’s best to slice them. While a 5-piece tube of cinnamon rolls comes pre-portioned, the individual rolls are a bit too thick for this cobbler. Cutting each one in half creates 10 thinner rounds, which bake more evenly and cover all the fruit. This way, you get the perfect ratio of gooey peach filling to fluffy cinnamon topping in every bite.

Ingredients

  • 2 Tbsp. salted butter, plus more for the baking dish
  • 2 lb. fresh or frozen peaches, sliced (about 7 1/2 cups fresh and 8 cups frozen)
  • 3/4 cup sugar
  • 2 Tbsp. all-purpose flour
  • 2 tsp. lemon zest plus 1 tablespoon lemon juice (from 1 lemon)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. kosher salt
  • 1 (17.5-ounce) tube refrigerated cinnamon rolls (such as Pillsbury Grands! Cinnamon Rolls with Cream Cheese Icing)

Directions

    1. Step 1Preheat the oven to 350°F. Butter a 2-quart baking dish.
    2. Step 2In a large saucepan, melt the butter over medium heat. Add the peaches, sugar, flour, lemon zest, lemon juice, cinnamon, ginger, and salt. Cook, stirring frequently, until the sugar has dissolved and the peach juices are thickened, about 5 minutes. Remove from the heat and spoon into the prepared baking dish.
    3. Step 3Open up the tube of cinnamon rolls but do not separate the dough. Reserve the glaze. Using a serrated knife, slice the rolls into ½-inch thick slices (you’ll be cutting each roll in half crosswise). You should have 10 rounds.
    4. Step 4Arrange the rolls over the peaches so the fruit is mostly covered. Bake until the cinnamon rolls are golden and the peaches are bubbling, 40 to 45 minutes.
    5. Step 5Let the cobbler cool for 10 minutes. Then spread with the reserved glaze.

Tip: You can make the filling up to 3 days ahead and store it in an airtight container in the fridge. Before using, let it come to room temperature, warm briefly in the microwave, or spoon it directly into the baking dish and warm it in the oven. Store leftovers, tightly covered, in the refrigerator for up to 3 days.
