Your cookies for Santa are baked, your Christmas dinner menu is set, and the last thing on your list is figuring out Christmas morning breakfast. That’s where this easy cinnamon roll breakfast casserole comes in.

All you need are a few tubes of refrigerated cinnamon roll dough and some pantry staples to make your home smell heavenly on Christmas morning.

Ree Drummond makes pans and pans of her classic homemade cinnamon rolls every year for friends and family at Christmastime. If you don’t have enough time to make them from scratch, go ahead and give this cinnamon roll breakfast casserole a try instead.

What ingredients do you need for a cinnamon roll breakfast casserole?

This cinnamon roll breakfast casserole is made with refrigerated cinnamon roll dough that is cut into bite-size pieces and coated in a mixture of eggs, half-and-half, cinnamon, and salt. It’s topped with brown sugar-coated pecans, baked until golden brown, then finished with a drizzle of the frosting that comes with the cinnamon roll dough.

Can you make this breakfast casserole the night before and bake it in the morning?

Since this casserole uses unbaked dough, it doesn't need time to soak overnight. Prep it just before baking in the morning—it'll only take you 15 minutes! If you're looking for make-ahead breakfast ideas, these casseroles will fit the bill.

How do you store leftover cinnamon roll breakfast casserole?

Leftovers can be tightly wrapped in plastic wrap or stored in an airtight container in the refrigerator for up to four days. To reheat, let the leftovers come to room temperature, then place them in a 375-degree-Fahrenheit oven until warmed through, 8 to 10 minutes. The glaze may soak into the casserole, but it will still taste great.

What do you serve with cinnamon roll casserole?

This cinnamon roll breakfast casserole is amazing on its own, but to make it extra festive for Christmas, you could pair it with red and green fruit salad. A nice strong cup of coffee is a must!

Is cinnamon roll casserole dessert or breakfast?

The answer here is both! Cinnamon rolls have long earned their place at the breakfast table, and turning them into a cinnamon roll breakfast casserole definitely keeps them in breakfast territory. Still, with its sweet, buttery layers, this dish easily pulls double duty—and no one would complain if you served it with a scoop of ice cream for dessert!

Ingredients

  • 1 Tbsp. salted butter, for the baking dish
  • 3 12.4-ounce tubes refrigerated cinnamon roll dough (with frosting)
  • 4 large eggs
  • 1/2 cup half-and-half
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. kosher salt
  • 1/3 cup packed dark brown sugar
  • 1/3 cup pecans, chopped
  • 1/3 cup sour cream

Directions

    1. Step 1Preheat the oven to 350˚F. Generously butter a 9-by-13-inch baking dish. Cut each round of cinnamon roll dough into 4 pieces. Reserve the frosting packets.
    2. Step 2Whisk together the eggs, half-and-half, cinnamon and salt in a large bowl. Add the cinnamon roll dough and toss lightly to coat. Pour into the baking dish.
    3. Step 3Mix the brown sugar and pecans in a small bowl. Sprinkle on top of the casserole and bake until puffed, golden brown and cooked through, about 35 minutes.
    4. Step 4Meanwhile, whisk together the contents of the frosting packets and the sour cream in a medium bowl until smooth. Let the casserole cool for 10 minutes, then drizzle with the frosting.
