When there's a chill in the air, I start craving all things French onion. These meatballs pack those familiar cozy bistro flavors into juicy beef and pork bites seasoned with fresh herbs, garlic, and a dollop of dijon mustard. They get crisp and brown in the oven, then finish in a rich, savory beef broth sauce on the stove. Shower on plenty of shredded gruyère and let it melt into a glorious, stretchy cheese pull at the end. Don't forget to grab a slice of crusty bread—you’ll want to soak up every last drop.

What’s the best cheese to use for French onion meatballs?

Gruyère is considered the classic choice because it melts beautifully, has a nutty, slightly sweet flavor, and gives French onion soup its signature gooey topping. That’s why it works so well in these meatballs too. If you can’t find Gruyère, you can substitute another mild, melty cheese like Swiss, provolone, or fontina—or even use a blend of shredded cheeses if you like.

What’s the best meat to use for French onion meatballs?

Making meatballs with a blend of beef and pork gives them a more complex flavor, but you can use entirely beef or pork if you prefer. Ground pork will be leaner and less juicy than beef.

What can you serve with French onion meatballs?

This is a hearty dish that doesn't need a ton of fancy side dishes to make a satisfying meal. Add slices of crusty ciabatta bread or mashed potatoes on the side for something starchy. If you're looking to go a little lighter, try an arugula salad.

Ingredients

  • 6 Tbsp. salted butter
  • 2 lb. onions, thinly sliced
  • 1 1/2 tsp. kosher salt
  • 3/4 tsp. black pepper
  • 1/2 cup dry white wine
  • 2 tsp. chopped fresh thyme
  • 2 garlic cloves, finely chopped
  • 1/2 cup panko
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped, plus more for garnish
  • 1 Tbsp. dijon mustard
  • 1 large egg
  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 2 cups shredded gruyère cheese (about 8 ounces)
  • 2 Tbsp. all-purpose flour
  • 2 cups beef broth
  • 2 tsp. Worcestershire sauce
  • Baguette slices, for serving

Directions

    1. Step 1Preheat the oven to 425˚F. Line a baking sheet with parchment paper. Heat 4 tablespoons butter in a large ovenproof braiser or deep skillet over medium-low heat. Add the onions and season with ½ teaspoon salt and ¼ teaspoon pepper; stir. Cover and cook, stirring once, until the onions are softened and translucent, about 10 minutes. Uncover, increase the heat to medium, and cook, stirring, until very soft and deeply golden, about 10 more minutes.
    2. Step 2Add the wine, thyme, and garlic and cook, stirring, until the liquid evaporates and the onions are caramelized, about 5 more minutes. Remove half of the onions to a cutting board to cool slightly. Finely chop.
    3. Step 3Combine the panko, milk, parsley, mustard, egg, chopped onions, and the remaining 1 teaspoon salt and ½ teaspoon pepper in a large bowl. Add the beef, pork, and 1 cup of the gruyère and use your hands to gently mix until combined. Shape into 36 golf ball–sized meatballs (about 1½ tablespoons each) and arrange on the prepared baking sheet. Bake until golden and cooked through, about 15 minutes.
    4. Step 4About 5 minutes before the meatballs are finished, add the remaining 2 tablespoons butter to the onions in the pan and melt over medium heat. Sprinkle in the flour and cook, stirring, until the raw flour smell disappears, 1 to 2 minutes. Slowly pour in the beef broth and Worcestershire sauce, whisking constantly, until no lumps remain. Simmer until the sauce thickens and coats the back of a spoon, 4 to 5 minutes. Add the meatballs to the sauce, turning to coat. Sprinkle with the remaining 1 cup gruyère.
    5. Step 5Turn the oven to broil and broil until the cheese is golden and the sauce is bubbling, 2 to 3 minutes. Sprinkle with parsley and serve with baguette slices.
