Apple Cider Slushies

Apple cider is one of fall's best treats, but isn’t just for sipping warm on chilly days—it can also be turned into a frosty, refreshing drink that’s perfect for those hot early fall afternoons. These apple cider slushies are bursting with cozy flavor, blending cubes of frozen cider with a touch of maple syrup and a dash of apple pie spice for that classic orchard feel.

They’re fun and festive for the whole family, but can also be dressed up with a splash of bourbon or apple brandy for the grown-ups. A sugared rim and simple garnish of apple slices or cinnamon sticks make them feel extra special, while still keeping things quick and easy. All that’s missing is a fresh apple cider doughnut or a slice of apple cider cake!

What can be used in place of apple pie spice?
No apple pie spice at home? No problem! You can make your own blend by whisking together 1 3/4 teaspoons ground cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon allspice.

What is the difference between apple cider and apple juice?
Apple cider is typically unfiltered, so it has a fresh, cloudy appearance and a tangier “just-picked” flavor. Apple juice, on the other hand, is filtered and usually sweeter. For this recipe, cider is the best choice to give the slushies that rich, apple orchard-fresh flavor.

Do I need a high-powered blender to make these slushies?
Nope! A high-powered blender will make quick work of the frozen cider cubes, but you can still make these slushies in a regular blender. Just pause and scrape down the sides a few times as you go, and add a splash more liquid cider if needed to help everything blend smoothly.

Ingredients

  • 1 qt. apple cider
  • 2 Tbsp. granulated sugar
  • 2 1/2 tsp. apple pie spice
  • 1 lemon wedge
  • 2 Tbsp. maple syrup
  • 6 oz. bourbon or apple brandy (optional)
  • Thinly sliced apples and cinnamon sticks, for garnish

Directions

    1. Step 1Pour 2 3/4 cups apple cider into ice cube molds and freeze until solid, 3 hours or overnight. 
    2. Step 2In a shallow dish, combine the sugar with 2 teaspoons of the apple pie spice. Run the lemon wedge around the rims of 4 glasses, then dip the rims into the spiced sugar, turning to coat; set aside.  
    3. Step 3In a blender, blend the cider cubes, maple syrup, bourbon or brandy (if using), and remaining 1 1/4 cups apple cider and 1/2 teaspoon apple pie spice until thick and smooth. Divide the drink among the glasses and garnish each with an apple slice and cinnamon stick.
