If fall had a flavor, it would taste exactly like these pumpkin oatmeal cookies—sweet, spiced, and oh-so-comforting. They’re everything you love about oatmeal cookies, but with a seasonal twist that makes them perfect for holiday dessert trays. The pumpkin puree keeps them soft and chewy, while the brown sugar and butter make them perfectly rich. Add a drizzle of simple vanilla glaze on top, and you’ve got yourself a cookie that’s as pretty as it is delicious. I love how the oats give them that hearty, chewy texture, while the pumpkin adds just the right amount of warmth and moisture. They taste like a hug in cookie form!

Whether you’re a pumpkin fanatic (try this pumpkin bread, pumpkin spice cake, or pumpkin pancakes, if you are!) or just looking for a new seasonal favorite, these pumpkin oatmeal cookies are the perfect mix of classic comfort and autumn sweetness.

Can you add mix-ins into pumpkin oatmeal cookies like nuts or chocolate chips?

Of course! You can stir in 1/2 cup chopped pecans, walnuts, or even white chocolate or semisweet chocolate chips—they will all pair well with the pumpkin and spices. Go wild—it’s fall, after all!

Can you make these cookies ahead of time?

You totally can, but the fresher they are the better they'll taste. The baked cookies will stay fresh for up to 4 days in an airtight container, or you can pop them in the freezer the day you make them and freeze them for up to 3 months. If you want to just make the dough ahead of time, you can refrigerate it, tightly covered, for 1 day before baking.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 Tbsp. pumpkin pie spice
  • 1 1/2 tsp. baking soda
  • 1 tsp. kosher salt
  • 3/4 cup (1 1/2 sticks) salted butter, at room temperature
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup pure pumpkin puree
  • 1 large egg, at room temperature
  • 2 1/2 tsp. vanilla extract
  • 3 cups old-fashioned rolled oats
  • 2 1/2 cups powdered sugar, sifted

Directions

    1. Step 1Preheat the oven to 350°F. Line 2 baking sheets with parchment paper.
    2. Step 2In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt. Set aside.
    3. Step 3In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, brown sugar, and granulated sugar on medium-high speed until fluffy, 3 to 5 minutes. Add the pumpkin puree, egg, and 2 teaspoons of the vanilla, scraping the bowl as needed. Reduce the speed to low and gradually add the flour mixture, mixing just until combined. Fold in the oats by hand with a rubber spatula. 
    4. Step 4Scoop half the dough into roughly 1 1/2-tablespoon balls and place on the prepared baking sheets 2 inches apart. Bake until golden brown, 14 to 17 minutes. Let cool for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely. Let the baking sheets cool, then repeat with the remaining cookie dough. Let the cookies cool completely.
    5. Step 5In a medium bowl, whisk together the powdered sugar, the remaining ½ teaspoon vanilla, and 3 tablespoons water to a consistency loose enough to drizzle. If the glaze is too stiff, add water, 1 teaspoon at a time. Drizzle the cooled cookies with the glaze and allow to set, at least 15 minutes.

Tip: You can freeze the unbaked cookie dough to bake later on. After scooping the dough into balls, place them on a parchment-lined baking sheet and freeze until solid. Transfer the dough balls to a zip-top bag and freeze for up to three months. The dough can be baked from frozen, adding a few minutes to the bake time as needed until they're golden brown.
