If you’ve never made homemade popovers before, this parmesan-herb popover recipe is about to change your baking game. These light, airy rolls puff up beautifully in the oven and come out golden brown with crispy edges and soft centers. They’re infused with the flavors of fresh herbs like sage, rosemary, and thyme, plus a sprinkle of parmesan cheese for that irresistible savory finish. The best part? They look really fancy but are surprisingly easy to make—no special equipment or complicated steps required. They're the perfect side dish for any holiday meal—and pair so well with the flavors of Thanksgiving, like herby roasted turkey, crunchy sausage stuffing, and simple garlic green beans.

The popovers start with a simple batter made in the blender, which keeps things light and perfectly combined. As they bake, the popovers rise dramatically in the oven, creating those signature hollow centers just waiting to be slathered with the homemade garlic butter. The garlic butter, by the way, is as simple as it gets—just softened butter and freshly grated garlic stirred together into pure perfection when it hits the warm popovers. Trust me, once you make these little showstoppers, you’ll want to bake them again and again.

Do you need a special popover pan for this recipe?

Nope! A regular 12-cup muffin pan works just fine in this popover recipe. It helps to preheat the pan before adding the batter—that’s what gives the popovers their signature rise and crisp outer edges.

What herbs work best in these popovers?

My favorites are sage, rosemary, and thyme, especially during the holidays, but you can mix and match! Parsley, chives, or even basil would be delicious, too.

Can you make these popovers ahead of time?

Popovers are best served fresh out of the oven when they’re hot and crisp. But you can bake them a few hours ahead and reheat them in a 350°F oven for about 5 minutes before serving.

Ingredients

POPOVERS

  • 6 Tbsp. salted butter
  • Cooking spray
  • 1 1/2 cups whole milk
  • 4 large eggs, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh herbs (such as sage, rosemary and thyme)

GARLIC BUTTER

  • 1 stick salted butter, at room temperature
  • 1 garlic clove, grated

Directions

    1. Step 1Make the popovers: Preheat the oven to 450˚. Dice 2 tablespoons of the butter into 12 small pieces. Coat a 12-cup muffin pan with cooking spray and place a piece of butter in each cup. Melt the remaining 4 tablespoons butter in a small bowl in the microwave and set aside.
    2. Step 2 Microwave the milk in a microwave-safe liquid measuring cup until warm, about 30 seconds. Add it to a blender, along with the eggs and blend until combined and frothy, about 30 seconds. Add the flour, melted butter, salt and pepper and pulse until combined. Add the parmesan and herbs and pulse just until combined. Let rest for 10 minutes.
    3. Step 3Place the greased muffin pan in the oven until it gets very hot, about 3 minutes. Remove from the oven and quickly divide the batter among the cups (about ⅓ cup each). Bake for 15 minutes. Without opening the oven, reduce the oven temperature to 350˚ and continue baking until the popovers are evenly browned, about 15 more minutes.
    4. Step 4While the popovers bake, make the garlic butter: Stir together the butter and grated garlic until smooth. Serve the hot popovers with the garlic butter.

Tip: Make the garlic butter the day before if you like a more mellow garlic flavor, it'll soften up as it sits in the fridge.
